Tropical taste in an ice cream? Yep. Take a bite of Creamy Coconut Pineapple Ice Cream, close your eyes and for a moment, you might be transformed to a beautiful tropical island, waves lapping around you. In fact, when I was eating it recently, I was instantly projected forward to July, when I am traveling to Orlando to speak at the Food & Wine Conference. I felt like I was there already, lying on the beach and soaking up the sun. (she says as she peers out the window at the dreary, grey, rainy day with dropped temps.)
Yes, yes that would be nice.
But in the meantime, I’m going to be enjoying this ice cream.
Creamy Coconut Pineapple Ice Cream
I had a recipe for a coconut ice cream that we’ve made several times. I thought, you know what would make this ice cream better? Throwing some tropical fruit into the mix.
We only went for the pineapple this time, but the first time we did the combo, we also added toasted coconut flakes, so if that’s your thing, I say go for it.
Today is letter I and I just couldn’t not do an Ice Cream post. I was saving this one for summer, but you know – no. It needs to be out there. You need to make this. You need to slip away to a tropical paradise like I did. It just wouldn’t be fair for me to keep it to myself for when I feel like posting it. Not fair at all.
