Tropical taste in an ice cream? Yep.
Take a bite of Creamy Coconut Pineapple Ice Cream, close your eyes and for a moment, you might be transformed to a beautiful tropical island, waves lapping around you.
In fact, when I was eating it recently, I was instantly projected forward to July, the middle of summer and when my trip to Florida will occur.
I felt like I was there already, lying on the beach and soaking up the sun.
(she says as she peers out the window at the dreary, grey, rainy day with dropped temps.)
Yes, yes that would be nice.
But in the meantime, I’m going to be enjoying this ice cream.
Creamy Coconut Pineapple Ice Cream
I had a recipe for a coconut ice cream that we’ve made several times. I thought, you know what would make this ice cream better?
Throwing some tropical fruit into the mix.
We only went for the pineapple this time, but the first time we did the combo, we also added toasted coconut flakes, so if that’s your thing, I say go for it.
Today is letter I and I just couldn’t not do an Ice Cream post. I was saving this one for summer, but you know – no.
It needs to be out there. You need to make this.
You need to slip away to a tropical paradise like I did.
It just wouldn’t be fair for me to keep it to myself for when I feel like posting it. Not fair at all.

Recipe for Creamy Coconut Pineapple Ice Cream
Creamy Coconut Pineapple Ice Cream
Ingredients
- 1 cups milk
- 14 oz Cream of Coconut found in the alcohol aisle
- 1 ½ cups half and half or heavy cream
- 1 cups flaked coconut toasted
- 8 ounces pineapple bits
Instructions
- In your blender, combine the cream of coconut with the milk and blend together well.
- Next, stir in the cream. (don’t blend.. it will begin to whip and you don’t want it to)
- Stir in the pineapple and the toasted coconut.
- Pour everything into the canister of your ice cream maker, and follow your ice cream makers manufactured instructions.
Just finished making the coconut pineapple ice cream…it’s fantastic!

I am SO sad I don’t have an ice cream maker right now. Maybe I should move next door to you and have you make it for me, so I don’t have to buy one 😉 This ice cream looks phenomenal – no wonder you couldn’t wait until the summer to make it! Talk about a tantalizing taste of the tropics.
I made only two kinds of ice cream so far, and this recipe makes me wonder what are the differences of results when ice cream recipe was boiled, and not boiled or not cooked?
For example, I am guessing this one doesn’t require cooking and bringing to boil the base ingredients, because all are liquid? No egg, no sugar in the content makes it easier to blend?
And then when recipes call their contents to boil once or twice, what is expected to happen?

I’m lactose intolerant and sensitive for autoimmune issues. Can this be made dairy free? I can use coconut milk for the milk but what could I use for the heavy cream/half n half? It’s tough to find yummy recipes that are safe for me to eat. Thank you!
I really am not a nutritionist and do not know what you would substitute for the heavy cream/half n half. I’m really not sure if there is anything that exists that would work and make the recipe correct. Again, I do not know if there is something, but doesn’t mean there isn’t. Good luck on your search. I would imagine it has to be very tough for you, and I’m so sorry I don’t have a solution. <3

I love this stuff!!! I did tweak it a little. Instead of milk I used a cup of pineapple juice that is in a can of sliced pineapples. I also used a 15 Oz can of Cream of Coconut instead of liquor. I also put it in a bag and then put it in the freezer because I didn’t want to pull out the maker. I took it out every half hour to mix it until it was ready. YUM YUM I will make this again!!!
