Grilled Creamy Parmesan Tilapia

Grilled was the only way to go with the letter G, and since today is day 7, that means we have been doing this for one week now. Tomorrow should be fairly quiet around here, since we don’t post on Sundays (except last Sunday – the first day) but for today it’s Grilled food, and I chose a Creamy Grilled Tilapia with Parmesan.

G is for Grilled Creamy Parmesan Tilapia

Ingredients

  • 4 tilapia fillets, 6-8 ounces each, cleaned well
  • ¾ c. grated Parmesan
  • 1 minced garlic clove
  • 1 ⅓ c. light mayonnaise
  • 4 Tbs. lemon juice
  • salt and pepper, to taste

Instructions

  1. In a medium bowl, blend the Parmesan, garlic, mayo and lemon juice.
  2. Dip the fish into the Parmesan mixture and coat both sides evenly.
  3. Sprinkle salt and pepper, to taste.
  4. Grill coated fish for 4 minutes on each side over high heat until the creamy mixture turns a golden brown.
  5. If you decide to oven cook - 400 for 10-12 minutes on cookie sheet (flip halfway).
  6. Serve immediately. Enjoy!
