When I’m invited to a BBQ or outdoor party in the summer, my friends and family always want me to bring a dessert.

I know it’s because they know I love to get creative, and I’m probably going to come up with something unique and different.

And it’s always delicious.

I didn’t disappoint recently, with these fabulous Dr Pepper Cherry Ice Cream Sundaes, topped with a luscious Dr Pepper Cherry Caramel Sauce!

For a recent get together with some friends, my daughter and I decided to try something a little different.

We have a loving relationship with Dr Pepper in our fridge. Dr Pepper is always in our home and we never ever let it run out on us.

We drink them morning, noon and night and we really aren’t all that picky about flavors and such.

We like Diet, Regular and even Cherry. The Dr Pepper Cherry was what we wanted for our dessert that night and we got working on it the day before.

It’s pretty simple really if you have an ice cream maker and walmart carries those too, so you need one, for this recipe alone. It’s so good.

The Dr Pepper Cherry flavor comes through in the ice cream, and you can even taste it in the caramel sauce, which my kids were devouring by the spoonful, I might add.

We decided to create Sundae’s with our ice cream and caramel, topped them with cherries and there were oooh’s and ahhh’s from everyone.

It was a huge hit, and people were totally surprised at how much it tasted like Dr Pepper.

Not only that, they were pretty excited because it was 98 degrees and it was a quick and easy way to cool down.

That’s how we cool down in the hot summer sun, a nice, ice cold, Dr Pepper but throw in some frozen creamy goodness and we are sold!

Ingredients
  

For Ice Cream:

  • 4 cups Dr Pepper Cherry cold and flat
  • 14 ounces sweetened condensed milk
  • 1 cups whole milk

For Dr Pepper Cherry Caramel Sauce:

  • 3 cups Dr Pepper Cherry open about 12-24 hours before use, cover and allow to sit at room temperature
  • ¼ cups water
  • 1 cups granulated sugar
  • ½ cups brown sugar
  • 8 tablespoons butter melted
  • cups heavy cream

Instructions
 

  • Mix all of the ingredients for the ice cream together in a large bowl. Mix well.
  • Pour into a 2 quart ice cream maker. Follow directions for ice cream maker.
  • Freeze as directed on the ice cream maker.
  • For soft serve, enjoy immediately. For firmer ice cream, place in freezer for a few hours to harden.
  • Pour the flat Dr Pepper Cherry into a saucepan, and boil until it reduces in volume by about half.
  • In a second saucepan, over medium-high heat, stir the water and white granulated sugar until the sugar is melted. Stir frequently and do not let it burn. Heat to boiling and until it is a nice golden color and as soon as that happens, stir in the brown sugar and the butter.
  • In another sauce pan put your water and granulated sugar. While heating it to boiling watch that you don’t burn it. It should turn into a nice golden amber color. Once the sugar turns amber add the brown sugar, and melted butter.
  • Remove the saucepan from the heat and whisk until well blended and smooth. Whisk in the heavy cream and the Dr Pepper.
  • Return to burner on low and stir with whisk until caramel sauce is smooth and well combined.
  • Serve over ice cream, cakes, drinks and more.
