5 Summer Ice Cream Recipes to Beat the Heat!

I don’t know where you are, but where I am (St. Louis) we’ve had some weird weather the past month. One week it’s so hot and humid you can barely breathe and the next week you start wondering if Fall is around the corner.  It’s definitely been a strange summer, but I am not complaining because I enjoy the fact that we haven’t hit temps like we did last year. But even with the “cooler than usual” temps, it’s still hot and we are still finding ways to beat the heat.

These fun ice cream recipes will keep you covered as the hot days of summer continue on. We are homeschooling this year, but regardless our local district starts school next week! (August 6th!) So make some ice cream and enjoy these treats. Before you know it, summer will be over and Fall will be staring us down.

1. Creamy Coconut and Pineapple Ice Cream

Tropical taste in an ice cream? Yep. Take a bite of Creamy Coconut Pineapple Ice Cream, close your eyes and for a moment, you might be transformed to a beautiful tropical island, waves lapping around you.

2. Dr Pepper Cherry Ice Cream with Dr Pepper Cherry Caramel Sauce

A creamy, cherry flavor filled ice cream that tastes just like Dr. Pepper. The Dr Pepper Cherry flavor comes through in the ice cream, and you can even taste it in the caramel sauce, which my kids were devouring by the spoonful, I might add.

3. Roasted Banana and Coconut Ice Cream

I came up with this Roasted Banana and Coconut Ice Cream because I had a big bunch of bananas we had forgotten about and they were getting way too soft and I could smell them while I was thinking about it. I couldn’t just let them go to waste, I wasn’t planning on baking any Banana Bread, so I went with this ice cream instead.

4. Two Ingredient Banana Peanut Butter Ice Cream

Two ingredients. Bananas and Peanut Butter blended together to make this amazing Banana Peanut Butter Ice Cream. This recipe is ridiculous. Easy. And omg, delicious. SO good. Like best Banana ice cream I’ve ever tasted.

5. Chai Spice Coconut Ice Cream

This Chai Spice Coconut Ice Cream is Dairy, Egg, & Soy Free. It’s also ridiculously delicious and a little addicting. We ate a lot. And then made it again…
