We really enjoy donuts at our end, and own several donut pans for baking up delicious little fluffy circles ANY time. They are fantastic with a cup of coffee or tea, go well with a tall glass of milk and go really well with any breakfast or brunch.

Glazed Lemon Donuts
Ingredients
For the Donuts
- 2 cups all purpose flour
- 1 cup granulated sugar
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 2 large eggs beaten
- ¾ cup heavy cream
- 3 tablespoons butter melted
- ¼ cup lemon zest
- 1 teaspoon lemon extract
For the Icing
- 2 tablespoons lemon juice
- 1 tablespoons lemon zest
- 2 tablespoon half and half more if needed to get desired consistency
- 2 cups powdered sugar
Instructions
For the Donuts
- Preheat your oven to 325 degrees. Spray your donut pan with non stick cooking spray.
- In a mixing bowl, combine the flour, sugar, baking powder and salt.
- In another mixing bowl, whisk your eggs, then add the cream, butter and lemon extract and whisk until incorporated.
- Slowly add the dry ingredients into the wet ingredients and blend just until incorporated. It will be a little thick, don’t worry about this. Fold in the lemon zest. Use more if you want more great lemon flavor.
- Open a freezer bag and dump the dough into the bag. Seal the bag and snip the bottom corner off one side.
- Pipe the dough into your donut pan about 2/3 full.
- Bake at 325 degrees for 10-12 minutes. You can tell they are done because if you press on the donut, it will spring back up.
- Allow to completely cool on a rack before icing.
For the Icing
- Blend the half and half, lemon juice and lemon zest. Add in the powdered sugar one cup at a time stirring in between.
- If you want a thinner icing, only use the 1st cup. If you want a thicker icing, use the second cup of powdered sugar. Add more or less as desired. You can also add 1/4 teaspoon of lemon extract for more flavor, if desired.
- Pour or brush the icing over the donuts. You can also dip the tops of the donuts into the mixture. Enjoy!
