A recipe for Easy Mac Pasta, full of great tomato flavor and comes together quickly. A fantastic weeknight meal!

Easy Spaghetti Macaroni Dinner

Happy Monday! It’s time for This Week’s Cravings and this week is in honor of those wonderful men in our lives.

Man’ly Meals are on the menu and I’ve got one to share.

Here’s the story behind this interesting concoction. This is my hubby’s favorite meal in the world to make.

He would make this 5 nights a week if I’d let him. I don’t.

He calls it a “mock goulash”. We call it Mike’s Macaroni or Mikaroni.

Either way it’s perfect for a quick weeknight dinner (start it right when you get home, and you’ll be eating an hour later with very little work), it’s hearty and delicious and not too complicated to make.

Ingredients

  • 2 pounds lean ground beef
  • 2 large onions chopped
  • 2 cloves garlic chopped
  • 3 ½ cups water
  • 30 ounces tomato sauce
  • 30 ounces Rotel but you could totally go hotter if you wanted)
  • 2 cups elbow macaroni uncooked

Instructions

  • In a large stock pot on the stove, saute the ground beef over medium-high heat until just cooked. You don’t want any pink remaining.
  • Break the meat up so it’s crumbled in there and then strain off the grease.
  • Add the chopped up onions and the garlic to the meat.
  • Saute about five minutes until they are tender.
  • Add 3 1/2 cups of water, the tomato sauce, and the rotel. Stir it all together, top with a lid and allow it to cook about 15 minutes.
  • Add the elbow macaroni right to the pot. Top with the lid and allow it to simmer for about 30-45 minutes.
  • Remove from the heat and allow it to sit about 15 minutes more.
  • We usually allow for about an hour of cooking time.
  • This can be done in the crock pot also by adding all ingredients except the noodles and slow cooking all day on low. When you return home, about an hour or so before you are ready to eat, just turn the crockpot up to high and add the noodles. Cook until they are tender. Delicious!

  1. Love this macaroni…it reminds me of American Chop Suey or Chili Mac. I love to brown up some ground beef, garlic and onions with sauce and add macaroni. Will certainly try this! Also love the MANLY theme link-up!
