Don’t spend a ton on those expensive coffee drinks from your local coffee shop, instead whip up a batch or two of this Dairy-Free Coconut Vanilla Iced Coffee. It’s just as good and costs much less!
I am not real sure how I am at the backside of summer staring down the cooler days of fall. Here in St. Louis we have already had the sweet taste of cool wind, crisp mornings. Only a few times, but still really nice. It’s this time of the year I love to drink my coffee out on the patio in the morning. Or I enjoy an afternoon iced coffee with my work on the patio.
I love being outside as the heat begins to fade away into cooler weather. These Dairy-Free Coconut Vanilla Iced Coffee’s were exactly what I needed as a pick me up just a few days ago.
Today is the September reveal for Secret Recipe Club and while I had a whole list of recipes to make from my partner, I chose these Dairy-Free Coconut Vanilla Iced Coffee’s because we just moved and I (we) needed a break. Before I tell that story, let me tell you about my awesome partner this month. I was QUITE lucky and got Dorothy of Shockingly Delicious.
Dorothy and I have known each other for a long time, as we run in lots of different foodie circles together, the longest being this group. We also had the chance to meet each other at the Food and Wine Conference and I can even remember eating breakfast with her one morning there.
Dorothy has LOADS of delicious recipes on her blog and we had her Dutch Baby Oven Pancake with Blueberries and Blood Oranges on my list, as well as Spiced Banana Coffee Cake with Crumbs, and on the savory side her Roast Beef Horseradish Arugula Grilled Cheese Sandwich and her Garlic Ginger Soy Grilled Angus Beef Steak sound absolutely amazing!
This Dairy-Free Vanilla Iced Coffee finally won out when we were just looking for something simple that we could make with a half packed kitchen. We were all exhausted and this was the perfect solution to increase energy to keep us going. We loved it! Thank you Dorothy!!
I made a few extremely minor changes to Dorothy’s original recipe (besides adding an ingredient to the title). She used So Delicious Vanilla Coconut Milk and we chose So Delicious Original Coconut Milk.
I also had a half full can of cooking coconut milk in the fridge (and didn’t really want to move it) so I added a splash of that to each drink (probably about a tablespoon or so) mostly to give it a nice mild coconut flavor.
And last but not least, instead of blending it all together ahead of time, I poured the drink in sections to give it a fun look which my teenagers loved. They told me I should be a barista. I don’t think I qualify just because I had some fun with how it looked in the glass. LOL

Dairy Free Coconut Vanilla Iced Coffee
Dairy-Free Coconut Vanilla Iced Coffee
Ingredients
- ¼ cup coconut milk
- 1 tablespoons vanilla coffee syrup we use Torani
- 1 Tablespoons sweetened coconut milk in a can
- ¾ cup brewed coffee cooled
- ice
Instructions
- Add ice to an empty glass.
- Pour the coconut milks and the vanilla in. Stir well with ice.
- Slowly pour the cold brewed coffee over the top allowing it to gently swirl.
- Stir with a spoon, straw or coffee stirrer. ENJOY!
