Baja Shrimp Tacos with Baja Cream Sauce

With our busy schedule, easy meals is the name of the game here at my house.  

During these cold winter months, I like to keep my family fed well with some variety. I want hearty, healthy meals but that don’t take a ton of time and use simple ingredients.

This recipe was originally written for McCormick, but they discontinued the original skillet sauce the recipe called for.

So back to the drawing board, and this new, delicious recipe is actually better!

  • At the original time of writing this article, the tacos themself were only 4 ingredients. Due to the discontinuation of one of the products, I had to find a solution. So the ingredient list has grown a little.
  • I have included the recipe for a Baja Cream Sauce for these tacos, but if you wanted to use a store bought version, you can do that too.

Ingredients for Baja Shrimp Tacos

**Updated

1 pound of shrimp – peeled & deveined (you can use fresh or frozen)

2 tablespoons olive oil

½ packet, 4.ounces McCormick Taco with Chipotle & Garlic Skillet Sauce

Soft Corn or Flour Tortillas

Ingredients for Baja Cream Sauce

I simply cooked the shrimp in half the packet of sauce in the skillet, and then used the other half to make the delicious Baja Cream Sauce.

The Taco Skillet Sauce has a bit of a kick from the Chipotle, so it was full of great flavor and just made the recipe even better.

Ingredients
  

For Shrimp Tacos:

  • 1 pounds shrimp peeled & deveined
  • 1 tablespoon olive oil
  • 2 ounces taco sauce we used McCormick Taco with Chipotle & Garlic Skillet Sauce (hard to find)
  • 8 corn tortillas

For the Baja Sauce:

  • ½ cup plain yogurt
  • ½ cup mayonnaise
  • 2 ounces taco sauce we again used McCormick Taco with Chipotle & Garlic Skillet Sauce
  • 1 tablespoon fresh lime juice
  • ¼ cup fresh cilantro finely chopped
  • Optional:
  • Shredded lettuce
  • Red Onion chopped
  • corn niblets
  • black olives
  • capers
  • Avocado diced
  • tomatoes diced
  • cilantro or parsley chopped

Instructions
 

  • Add all ingredients to a blender and blend until combined. It should be pretty runny. It will thicken over time.
  • Refrigerate for at least 1 hour. The longer you let the flavors marry, the more amazing the sauce is, so don’t be afraid to make it ahead of time. Just remember to refrigerate the remainder of the packet of McCormick Taco with Chipotle & Garlic Skillet Sauce too. I make my in the morning, giving it the whole day to sit and combine flavors in the fridge, then I come home and make the shrimp and dinner is ready in about 20 minutes.
  • In a large skillet, saute the olive oil and shrimp for about 2-3 minutes over medium heat or until the shrimp starts turning translucent in color.
  • Add a half packet of McCormick Taco with Chipotle & Garlic Skillet Sauce in the skillet and continue cooking for about 15 minutes. Remove and serve.
  • Using flour or corn tortillas, layer the veggies and herbs you like on your tortilla.
  • Add the cooked shrimp on top and drizzle the Baja Cream Sauce over all of it.
  • Fold and enjoy!
