It’s tea time! haha No it’s not… but anytime can be tea time if you want it to be.
Grab a cup of tea or coffee and enjoy these wonderfully moist Strawberry Banana Scones. I prefer mine with a cup of coffee at just about anytime of day.
Tender, flaky, moist and oh, so very full of flavor, studded with strawberry and banana pieces, these scones are heaven.
Perfect with my breakfast or even just a midday treat with some tea or coffee.
While I am an avid coffee drinker, I did enjoy a cup of tea around 4pm with my scones and felt very British for a few minutes. I loved it.
I really think I might incorporate afternoon tea as a 4th meal in my house. No joke. It was wonderful.
These scones are tender and flakey, buttery and studded with fruit pieces and simply perfect for brunch. You need to make them!
Tips for Making Scones
- Cold Butter is King: For light and flaky scones, use cold or even frozen butter. This creates pockets of steam as the butter bakes, giving the scones lift and separation. You can grate the butter or cut it into cubes.
- Mixing Matters: Don’t overwork the dough! Just mix until the dry and wet ingredients are incorporated with pea-sized butter chunks. Overworking creates tough scones.
- Chill Before You Bake: After shaping your scones, pop them in the fridge for at least 15 minutes, or even overnight. This helps the butter stay cold and promotes better rise.
- Leavening Love: Don’t skimp on baking powder or baking soda! These leavening agents are what give your scones lift. Make sure they are fresh for the best results.
These are just a few tips to get you started. With a little practice, you’ll be a scone-baking pro in no time!
Strawberry Banana Scones Recipe
Strawberry Banana Scones
Ingredients
- 2 cups all purpose flour
- 3 Tablespoons granulated sugar
- 1 ½ teaspoons baking powder
- 1 teaspoons salt
- ¼ teaspoons baking soda
- ¼ teaspoons ground cloves
- ¼ cup cold butter
- ¾ cup buttermilk
- 1 ½ teaspoons banana extract
- ½ cup strawberries chopped
- ¼ cup frozen bananas chopped
Instructions
- Preheat oven to 425 degrees F.
- In a bowl, combine all of the dry ingredients (flour, sugar, baking powder, salt, baking soda, ground cloves).
- Cut in the butter until the dry ingredients resemble tiny coarse crumbs.
- Blend in the buttermilk and banana extract just until moistened.
- Very gently fold in the chopped up strawberries and bananas.
- Turn your dough out on a lightly floured surface. Knead gently about 10 times or so.
- You can use a rolling pin, but I just used my hands to create an 8" circle.
- Cut into 8 wedges like a pizza.
- Place the wedges individually on a large baking sheet coated with cooking spray.
- Bake for 10 minutes at 425 degrees or until the scones are golden brown.
- Serve warm, plain or with butter.
- Ah-mazing! (serve with tea or coffee for a wonderful treat!)
