  • sushi rice – you can use white rice as well, but sushi rice sticks way better
  • rice vinegar
  • granulated sugar

Ingredients 

  • 1 pound salmon boneless
  • 1 tablespoon olive oil
  • ½ cup cream cheese
  • ½ cup Japanese mayo plus more for drizzle
  • 2 tablespoons sriracha hot chili sauce plus more for drizzle
  • 3 cups sushi rice cooked
  • 2 tablespoons rice vinegar
  • 1 teaspoon granulated sugar
  • ½ teaspoon salt
  • ¼ cup furikake seasoning
  • 1 green onions sliced
  • 3 tablespoons sesame seeds

For Serving

  • toasted seaweed sheets
  • sliced avocado
  • kimchi
  • cucumber sliced or chopped
  • spicy mayo

Instructions 

  • Preheat oven to 425 degrees F.
  • Coat your salmon with olive oil, and then season with salt and pepper. Bake on a baking sheet for about 15 minutes or until the salmon easily flakes. Discard the skin.
    1 pound salmon, 1 tablespoon olive oil
  • In a medium bowl, place the salmon, cream cheese, Japanese mayo and Sriracha. Mix together until well combined.
    1/2 cup cream cheese, 1/2 cup Japanese mayo, 2 tablespoons sriracha hot chili sauce
  • If your rice isn't cooked, prepare sushi rice according to package instructions. While it's cooking, in a small bowl, combine rice vinegar, sugar and salt.
    3 cups sushi rice, 2 tablespoons rice vinegar, 1 teaspoon granulated sugar, 1/2 teaspoon salt
  • Toss the cooked rice and the rice vinegar mixture together until well coated.
  • In a 9×13 casserole dish, add the rice in a single layer pressing down gently. The add the furikake in a layer. Then top with a layer of the salmon mixture again pressing down gently.
    1/4 cup furikake seasoning
  • Bake at 425 degrees F in a preheated oven for 10-12 minutes.
  • Remove from oven and drizzle with more Japanese mayo and sriracha. Sprinkle with green onions and sesame seeds.

  • For serving, cut into squares or serve with Toasted Seaweed, scoop into center, add avocado, cucumber, kimchi, spicy mayo or whatever you desire.
