Dark Chocolate Mocha Waffles

Who said you can’t enjoy dessert for breakfast? Or even breakfast for dessert! With a hot cup of Door County Coffee, these Dark Chocolate Mocha Waffles were rich, chocolaty and filling! It was absolutely fabulous with a piping hot cup of coffee.

When I was asked to try Door County Coffee, I jumped on the chance. I love my coffee! I was so excited when I opened up the box filled to the rim with coffee. So many flavors, so little time.  (actually that’s not true since I have an order in my cart ready to ship more!)

I hopped around on the Taste of Home website for awhile, trying to figure out what goes well with coffee that I could make. Baked goods are always a favorite and it didn’t take long before I came across these Chocolate Dessert Waffles from Taste of Home.

This recipe for Dark Chocolate Mocha Waffles is loosely based on this recipe. I omitted milk and added dark roast coffee. I didn’t want the berries, I wanted all chocolate for this one. So I added chocolate whipped cream and chocolate sauce.

After I decided what I was going to make from Taste of Home, I then had to figure out what coffee roast I wanted for the waffles. I chose Death’s Door. But my goodness any flavor they have would probably be incredible and could add a rich, deep flavor to these.

My favorite Door County Coffee was by far the Blackberry Shortcake with the Blueberry Cobbler coming in a close second.

While there wasn’t a single one they sent I didn’t love, other favorites include Chocolate Covered Strawberry, Black and Tan, Peanut Butter Crunch and Jamaican Me Crazy.

They also sent a travel mug that is my favorite travel mug by far. It keeps the coffee hot for hours and I’m constantly surprised by that. One of the best I’ve found. I will be ordering one for a friend for Christmas. I also received this adorable Electric Blue Stoneware Mug that I use every morning now. I’ve gotten quite a few compliments on it!

While these waffles were definitely the bomb dot com, the coffee from Door County Coffee was equally as impressive and delicious. I have gone through all I have except one bag of the Highlander Grogg which I am working my way through now. Time to purchase more!

Ingredients
  

  • ¼ cup dark cocoa powder
  • 1 ½ cups cake flour
  • 2 teaspoons baking powder
  • ¼ teaspoons salt
  • ½ cup butter
  • 1 cup granulated sugar
  • 2 large eggs separated
  • ½ cup strongly brewed coffee
  • ¼ teaspoons vanilla extract
  • chocolate whipped cream
  • chocolate sauce

Instructions
 

  • Whisk together the dark cocoa powder, cake flour, baking powder and salt. Set aside the dry ingredients.
  • In a large bowl, cream the butter and the sugar until fluffy. Add eggs and mix well.
  • Add half of the dry ingredients, and half of the coffee and mix. Add the rest of the dry ingredients, rest of the coffee and the vanilla extract and mix until moistened.
  • Preheat your waffle maker and cook waffles according to manufacturer’s directions since they are all a bit different. Mine took about 3 minutes per set.
  • Allow waffles to cool a bit, top with whipped cream and chocolate sauce.
