With the doors and windows wide open, the cooler temperatures wrap themselves around me as I bake in my kitchen. There is no doubt that Autumn is nipping at my heels and I am so ready. I love baking this time of year, and add in the delicious spices and pumpkin recipes and I’m in pure bliss.

These little Chocolate Pumpkin Mini Trifles are absolutely perfect to put in you in the mood for Autumn.

I’m not necessarily a “pumpkin everything” kind of girl, but it’s definitely a favorite. When I was asked to try out the new Madhava Natural Sweeteners Organic Chocolate Cake Mix, I just couldn’t think beyond my love of Chocolate and Pumpkin together. That’s when these fun and delicious little Chocolate Pumpkin Mini Trifles were born.

Trifles are easy and fun desserts. Layering ingredients to make each one unique and what you want. Making them miniature is even better, since it’s all one serving size and allows you to make adjustments to each one making them unique for each individual.

I love that.

Some people might want crushed pecans on top, while someone else might want shaved chocolate. Anything that allows me to get creative with my desserts is a bonus win dessert recipe! That’s what’s so great about these Chocolate Pumpkin Mini Trifles.

These Chocolate Pumpkin Mini Trifles start with a layer of moist chocolaty Madhava Natural Sweeteners Organic Chocolate Cake, flavored with added pumpkin. They are then topped with a sweet spicy pumpkin layer, a bit of a whipped cream and some crushed cinnamon pecans crumbled on top.

They were a huge hit at our dinner party the other night, and I was glad I made extra servings, because seconds were a must! Next time I make then, I will probably be doubling the recipe and serving in larger dishes. Chocolate Pumpkin Mini Trifles are just that good and kinda addicting.

I decided to serve the Chocolate Pumpkin Mini Trifles in these adorable little square shot glasses because they were the perfect size for an individual serving. They made clean up easy so it was fantastic. Also it’s sort of the perfect serving size, though face it, most people want more than the traditional serving size. You do what works best for you.

We also had a nut allergy present, so I had to keep them individual so there was no nuts nearby. It was the perfect solution and everyone was happy.

Ingredients
  

For the Cake Layer:

  • 1 15.3 oz box Madhava Natural Sweeteners Organic Chocolate Cake Mix
  • 1 15 oz can pumpkin puree not pumpkin pie filling
  • 2 large eggs

For the Spiced Pumpkin Layer:

  • 1 8 oz. package cream cheese softened
  • ½ cup sour cream
  • 1 ½ cups powdered sugar
  • 1 15 oz can pumpkin puree not pumpkin pie filling
  • 1 tablespoon ground cinnamon
  • 1 tablespoon pumpkin pie spice or more to taste

For the Topping:

  • whipped cream
  • crushed cinnamon pecans or other nuts

Instructions
 

For the Cake Layer:

  • Mix together the cake mix, eggs and can of pumpkin. Pour into a prepared cake pan and bake at 325 degrees for 30-35 minutes.

For the Spiced Pumpkin Layer:

  • In a medium bowl, beat the cream cheese, sour cream and powdered sugar until blended and creamy. Add the can of pumpkin and mix until combined. Add the spices and mix together well. Cover and refrigerate for 1 hour or more before serving, giving the mix time to marry flavors.

To Assemble the Dessert:

  • Use small shot glasses or even small jelly or mason jars. Slice a piece of cake that can fit into the bottom of your serving glasses. Don’t worry if it’s not the right size, you can push the cake down to fit if you want. Once you have completed your chocolate pumpkin cake layer, spoon or pipe some of the spiced pumpkin layer on top of the cake layer. You can use as much or as little as you’d like.
  • Top the desserts with whipped cream and crushed cinnamon pecans, if desired.

Chocolate pumpkin tastes very delicious. I tried this recipe last week my family loved this dish. I have used organic coconut sugar to make this.
