I love eggs. More than I should, really. I could eat them seventeen times a day and probably not get sick of them. With that said, I am ALWAYS looking for ‘eggish’ recipes, and I must have a collection of 50 different deviled egg recipes alone.

We really enjoy a smooth and creamy egg salad. This egg salad base is absolutely smooth and as creamy as they come. We use it alone as a filling for deviled eggs.

We add chunks of eggs to really add texture and turn it into easily the Best Egg Salad.

But what makes this recipe the best egg salad recipe on the planet, is that you can do whatever the heck you want to it, and flavor it however you want, and it still tastes AMAZING. 

So after much taste testing of way too many different egg salad recipes, I present you with my favorite. Just made it this morning. It’s awesome on sandwiches, crackers, whatever!

Can I add ingredients to this egg salad recipe?

Yes! We think these are perfect, though I don’t think I’d add them all together:

  • 1/2 cup chopped celery
  • 1/2 cup chopped jalapenos
  • 1 tablespoon taco seasoning
  • 1 teaspoon chili powder
  • 3/4 cup chopped bacon
  • 1 cup mini cubed ham

How Can I Serve This Egg Salad

  • eat it by itself as a side dish, or with slices of toast for breakfast
  • spread it on flour tortillas and roll them up
  • scoop onto crackers for an easy snack
  • serve on spinach or lettuce or roll it up into a lettuce wrap
  • in a salad, could easily be added to a Cobb Salad instead of egg slices.
  • scoop tortilla chips into the salad and enjoy

What do you need to make the Best Egg Salad Recipe?

  • eggs
  • mayonnaise
  • yellow or dijon mustard
  • green onion
  • paprika, to taste
  • salt and pepper

A Couple of Recipe Notes

The paprika is NOT necessary and can be replaced with whatever seasoning you want, but we really do love it in the salad.

But you can also try it with:

  • garlic powder
  • extra pepper or white pepper
  • steak or burger seasoning
  • cut fresh herbs

Don’t forget to get creative and make it your own. You can add relish, chopped pickles, garlic or whatever you like in your egg salad. Try jalapeños, chili powder or taco seasoning.

Ingredients
  

  • 16 large eggs
  • 1 cup mayonnaise
  • 2 teaspoons yellow mustard can also use dijon mustard
  • ½ cup green onion
  • ¼ teaspoons paprika
  • salt and pepper to taste

Instructions
 

  • Place the eggs in a pot and cover with cold water. Bring the water to a boil and then remove from heat. Cover the pot and then let the eggs stand in the hot water for about 10-15 minutes.
  • Remove them from the hot water and allow them to cool. Once cooled, peel the eggs. Chop up and/or smash the eggs.
  • In a large bowl, place the chopped eggs. Stir in the mayonnaise, mustard and green onion or onion powder. Season with salt, pepper and paprika to taste. Stir it all together and serve on your favorite bread.

  1. I eat eggs a lot too. They are a staple in my diet. I actually have raw eggs mixed with my protein shakes, after my workouts. It’s been about two years now that I have been using shelled pasteurized eggs. But I would highly recommend them. I mean with all these recent egg recalls and food safety bills, you can never be too sure. As much as I cook for my big family of six, I always look to keep my family safe. Especially with the holiday season in full bloom, I’ve been incorporating them into all my cookie and eggnog recipes. You should check them out especially since you love to eat eggs so much.

  2. I love egg salad and deviled eggs! My grandmother showed me a recipe she has been using for years. It is the same base; mayo, mustard, and eggs but then she adds white distilled vinegar! It adds the best tang to the eggs and now I can’t eat them without the vinegar in it!
