This delicious Curry Egg Salad Sandwich is super easy to make – add your favorite toppings and choose your favorite bread and it’s the perfect lunch!
I hope everyone had a wonderful weekend and that all the mom’s out there had an enjoyable Mother’s day. I sure did! I enjoyed spending it with my family. I hope you did too.
It’s Monday and that means it’s time again for This Week’s Cravings. Our theme this week is Egg Recipes. Why? Because the month of May is National Egg month, of course!
We eat eggs a lot around our house so finding a recipe to share wasn’t hard at all. Besides my total obsession with Deviled eggs (which is probably made clear by how many recipes I’ve posted for them: Simple Deviled Eggs, Deviled Eggs with Olives, Lemon Pepper Deviled Eggs and Curry Deviled Eggs ), I also really love egg salad and I really love egg salad sandwiches.
So that’s what I decided to make for This Week’s Cravings.

Curry Egg Salad Sandwich
Curry Egg Salad Sandwich
Ingredients
- 12 hard boiled eggs peeled
- 3 tablespoons green onions chopped
- 1 stalk celery minced
- 2 ½ teaspoons yellow curry powder
- ½ teaspoons salt
- ½ teaspoons pepper
- 2-3 Tbsp mayonnaise
Additional for sandwich:
- 1 lettuce leaf
- 2 pieces Rye bread
- 1 teaspoon paprika or some cayenne for spice
Instructions
To make the Egg Salad:
- Add all ingredients to a food processor and blend well. If you don't have a food processor – use a fork and mash up the egg as much as you can (you want some pieces of egg).
- Mix in all of the other ingredients.
- Scoop out some egg salad and place it on the Rye bread.
- Top with a lettuce leaf and any other condiments you'd like and the other piece of Rye bread.
Nicole ~ This curry egg salad looks wonderful! How many sandwiches do you get out of 12 eggs? If I wanted to reduce to say 4 sandwiches, what would the ratios be? I’d like to try this one! 🙂
Val, I believe this probably makes enough for about 4 sandwiches but I also think it depends on the size of the bread. For instance, I used rather large pieces of Rye bread and judging by how much I used on one sandwich, there is probably just enough left for 3 (maybe 4) sandwiches. If you were making it on regular sandwich bread (the bread is smaller) then I would think this probably makes enough for about 6-7.
We always make extra because you can store it in the fridge for up to 4-5 days. It will all be gone by tonight here. haha

Curry added to egg salad – double yum! I’ll have to try this recipe soon. We eat a fair share of deviled eggs and egg salad sandwiches too.
My grandmother used to make something similar. I always loved it. Egg salad sandwiches always remind me of her. Love them! This one looks soo good!
I love egg salad and had never thought of trying curry. I have a batch of boiled eggs just waiting for me to try this. Yippee!
