The Grinch Peppermint Sugar Cookies

- 1 ΒΌ cup all purpose flour
- ΒΌ teaspoons salt
- ΒΌ teaspoons baking soda
- ΒΌ teaspoons baking powder
- Β½ cup butter softened
- Β½ cup granulated sugar
- 1 medium egg room temperature
- Β½ teaspoons peppermint extract
- Β½ teaspoons vanilla extract
- green gel food coloring
Instructions
- In a large mixing bowl, whisk the flour, salt, baking powder and baking soda.
- In another bowl, beat the butter and sugar together until light and fluffy.
- Add peppermint and vanilla extracts and mix well. Add your egg and beat until well blended.
- Add the flour a little a time, scraping down the sides of the bowl until fully incorporated.
- Scoop or form 2" balls with the cookie dough. Place 2" apart on a lined baking sheet.
- Chill for about 5-10 minutes in the refrigerator. Don't skip this step.
- Bake cookies at 350 degrees F for 6-8 minutes.
- Cookies should be soft when removed. Allow to cool on baking sheet.
