It’s grilling season and I’m ready. At our house, we grill year round, but the majority is done Spring, Summer and Winter. From chicken to seafood, steaks to fish, anything goes when we are deciding what to grill.
When we were looking for something fun and different to make recently, we came across Cornish Hens, found at Walmart in the freezer bunkers. They come in a two pack and were inexpensive. My daughter and I were excited to get them home and get to work.
We fired up the grill as soon as we got home. We were ready!
The first step was spatchcocking the chickens for the grill.
We got our lovely Cornish Hens home and went to work immediately.
First, we spatchcocked the Cornish Hens, because it makes them better for grilling and allows them to lay flat.

Once the Cornish Hens were ready to go from the spatchcock procedure we performed, it was time to mix up the marinade and get these babies on the grill.
We made a delicious Garlic and Soy Sauce Marinade using Kikkoman Soy Sauce, because it makes the best chicken marinade!
We marinated these babies for about an hour while we got to work on our sides and baked some homemade rolls.
They were finally ready for the grill and our mouths were already watering.
The marinade smells SO good, and we just wanted to get these babies cooked and on the table.
We grilled the Cornish hens about 40-45 minutes or so, pressing down on them with the spatula to keep them cooking evenly and flat.
Finally, they were ready. We served them over a mixture of garlic rice and quinoa.
These Garlic Soy Grilled Spatchcocked Chicken were absolutely amazing! Tender, flavorful and the perfect summer dinner.

Recipe for Garlic Soy Grilled Spatchcocked Chicken
Garlic Soy Grilled Spatchcocked Chicken
- 2 Spatchcocked Tyson Cornish Hens
- ½ cups melted butter
- ¼ cups minced garlic
- 2 Tablespoons lemon juice
- ¼ cups of Kikkoman Soy Sauce
- In a large bowl, mix up the marinade by mixing together the butter, garlic, lemon juice and soy sauce.
- Allow the cornish hens to sit in the large bowl of marinade for 1 hour. I flipped them over at 30 minutes.
- Once they have marinated, fire up the grill.
- Place them flat on the surface of the hot grill. I cooked them for 20 minutes each side. I used a spatula to press them down and keep them flat while they are cooking. I have heard of others putting a foil covered brick on top, we did not do that, I just simply pressed them down a lot. I also added more marinade as they were cooking.
- Total cook time was about 40-45 minutes for juicy, delicious Cornish Hens.
