We are always on the lookout for recipes that can easily be doubled or tripled for large potlucks and other events.

But this Creamy BLT Pasta Salad, is rather large on it’s own.

This is one of my favorite recipes for a summer BBQ with hot dogs, hamburgers or chicken straight off the grill. It pairs perfectly.

In fact, this recipe goes really well with almost any main course like fish, chicken, steak and burgers.

It’s fairly easy to make, doesn’t take very long at all and looks quite pretty sitting on the plates ready to eat.

But don’t worry, it’s delicious also, but I won’t guarantee it will keep the calories away.

There are dozens of possibilities with this recipe too.

You can add things, take away things. Use whatever kind of pasta you want. Add extra veggies. Serve over lettuce, or don’t. It’s really all up to you.

BLT Pasta Salad Recipe

Yield: 10-12 servings

Creamy, flavorful easy to make pasta salad to feed a crowd. This recipe is fantastic for potlucks, brunches, summer BBQ’s, pool parties and so much more.

Ingredients

  • 22 oz pkg. of spiral pasta noodles, cooked and drained
  • 1 pkg. bacon, cubed and fried crisp, then crumbled
  • 1 bunch of green onions, sliced part way up the green stalks, chopped
  • 1 c. small cubed cheese or if you wish to make this faster, just use shredded cheese
  • 1 large tomato, seeded and diced
  • 1 ½ cups of Mayonnaise
  • 1 tablespoon mustard (regular or dijon)
  • (if you desire, you can omit the mayo and mustard and use ranch dressing instead – tastes great also!!)
  • Salt, pepper and/or seasoning, to taste.

Instructions

    1. In a large bowl, toss pasta with all ingredients except mayo and mustard.
    2. Add the mayo and mustard. Use more or less depending on how creamy you want the pasta to be. If you are using ranch dressing, start with a cup of ranch dressing and add more as desired.
    3. Chill well (at least 2 hours) before serving.
    4. Serve over lettuce, if desired.
