The posting date for the Crazy Cooking Challenge has arrived and it’s time to show off our theme for this month, which happens to be Fried Chicken. I couldn’t wait to share this delicious, moist Southern Ranch Fried Chicken.

First, let me tell you how difficult this month was for me. Mostly because I try really hard not to fry many foods. Of course, every now and then you really must enjoy some down home southern ranch fried chicken. Dipping it in ranch while you eat it, is also acceptable.

Originally I had chosen a recipe from a blog, but this month Tina changed the rules and said our recipe could come from anywhere. This made me smile, because this is a family recipe that I’ve been making for a long, long time and I really wanted to share it. We use this same coating on almost everything we fry. Sad, but true.

Mama’s Famous Southern Ranch Fried Chicken

Southern Ranch Fried Chicken

Yield: 10 -12 Chicken Strips
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

Use this recipe for chicken strips, breasts, nuggets or legs. It doesn’t really matter, it’s just that good.

Ingredients

  • 10-12 chicken strips, or 4-6 chicken breasts

The wet bowl (first dip):

  • 2 eggs
  • 1½ C. milk
  • 1 Tbs. Worcestershire sauce
  • A spoonful of flour, see directions

The dry Bowl (second dip):

  • 1 packet of ranch dressing or dip mix
  • ½ tsp. ground black pepper
  • 3½ c. all purpose flour
  • olive oil, EVOO is always my oil of choice
  • Homemade Buttermilk Ranch dressing, for dipping

Instructions

  1. In one bowl, whisk together your eggs, the milk and the Worcestershire sauce. Add a spoonful or two of flour. You want a really smooth consistency but with a little bit of hold. (this will make dipping easier and keep it on the chicken). When adding the flour, I often start with just a bit and keep adding until I like how it looks and holds on the chicken.
  2. In another bowl, combine the rest of your flour, pepper and the packet of ranch dressing or dip. If you want to add more seasonings, go right ahead.
  3. In a large frying pan over medium high heat, place a lot of olive oil, you want it to come about halfway up the sides of your chicken. I think I used a little over a cup. You want to make sure that chicken is nearly covered on the sides.
  4. Allow your olive oil to heat up at least 5 minutes. While this is happening, you can move onto the next step.
  5. Take a piece of chicken and dip it into the egg mixture. Coat it really well, make sure all sides get some. Next, dredge it through your ranch/flour mixture, making sure of course, to cover all sides of the chicken.
  6. Wait! Now I want you to repeat it one more time. Yes, same piece of chicken. Re-dip it into the egg mixture a little quicker this time (you don’t want all the flour to come off) and then dredge it back through the flour mixture again.
  7. You are now ready to fry the chicken. Simply place the chicken into your frying pan. Fry the chicken until the outside is golden brown and crisp, about 10-12 minutes per side. Be sure and flip during the halfway point.
  8. Serve with a side of homemade ranch dressing for a delicious meal!
