Ingredients
- 16 ounces salmon fillets this recipe should make two, skin off or on (your preference)
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter softened
- 2 cloves garlic minced
- ½ teaspoon dried parsley
- ¼ teaspoon dried thyme
- salt and freshly ground pepper to taste
- 6 ounces baby spinach
- ¼ cup feta cheese crumbled

- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper.
