In another bowl, cream the butter and sugar until light and fluffy, about 4 minutes. Add in the egg, molasses and vinegar. Beat until well blended.
Blend the wet ingredients into the dry ingredients.
Divide the dough into two or three separate rolled large logs and wrap in plastic wrap. Refrigerate for at least one hour.
Remove logs individually, and roll out dough with a rolling pin to desired thickness. The thinner you roll the dough, the crisper the finished cookie.
Cut our your shapes using cookie cutters and transfer to a prepared cookie sheet. Keep rolling out dough scraps
Preheat oven to 350 degrees. Bake cookies in preheated oven for 9-11 minutes. Remove from oven and allow to rest on sheet for a couple of minutes but no longer than 5. Move to cooling rack and allow to cool completely before decorating. Repeat with remaining dough until you've made all the cookies.
Once cookies are cooled, frost with frosting and sprinkle on sprinkles or decorate as desired.
