Apple Cinnamon Oat Bars
These may not look like much, but these Apple Cinnamon Oat Bars are so much more than just a healthy breakfast or snack bar. They are filling, kid-friendly and so incredibly flavorful. 2 cups all purpose flour 1 ½ cups brown sugar 1 teaspoons baking powder 1 ½ teaspoons apple pie spice 1 ½ teaspoons cinnamon 2 eggs 1 cup butter melted 4 cups Irish Oatmeal 2 ½ cups apple chopped Cinnamon Sugar for topping
Preheat oven to 350 degrees F.
Prepare a 9x13 baking dish with cooking spray.
In a large mixing bowl, whisk together the flour, brown sugar, baking powder and spices.
Add the melted butter and eggs and mix well.
Add the oats and apple chunks and mix well to combine.
Spoon the mixture into your prepared pan and sprinkle the top generously with cinnamon sugar.
Bake for 25 minutes or until the bars are firm to touch, and start to brown on the edges.
Remove from oven, allow to cool and cut into bars.
