Ingredients

  • 8 cups homemade chicken stock (or use storebought)
  • 1 teaspoon olive oil
  • ½ onion diced
  • 2 cloves garlic finely diced
  • 3 stalks celery diced
  • 2 teaspoons chicken bouillon
  • 1 bay leaf
  • salt and fresh black pepper to taste
  • ½ teaspoon dried thyme or basil
  • 1 ½ cup chicken cooked and diced
  • ½ teaspoon Fresh parsley chopped

Instructions

  • Sauté onions in olive oil until soft, about 3-4 minutes. Add garlic & cook for 30 seconds. Add broth & the remainder of ingredients. Cook over medium low heat for 1-2 hours.
  • Remove bay leaf and serve!
