Easy Weeknight Sausage and Rice Dinner

This Easy Weeknight Sausage and Rice makes your night MUCH easier. Takes about 20 minutes or so to prepare and it's simple!

Ingredients

For the Rice:

  • 3 cups instant rice
  • 3 cups water
  • 3 tablespoons italian herbs basil, oregano, thyme (minced)
  • 16 ounces alfredo pasta sauce We just use a jar of whatever we have on hand but you could totally make your own.

For the Meat and Veggies:

  • 4 strips bacon cut into pieces
  • 14 ounces Kielbasa sausage sliced
  • ½ cup bell pepper sliced
  • 14.5 ounces diced tomatoes
  • ¼ cup white onion diced
  • 2 tablespoons garlic minced
  • ½ cup shredded cheese add more if desired
  • 1 medium avocado sliced

Instructions

For the Rice:

  • Boil the water, add the rice, cover and allow to absorb water about 5 minutes. Sprinkle in the minced herbs and add the jar of pasta sauce, mixing everything together.

For the Meat and Veggies:

  • In a skillet, begin cooking the bacon pieces and sliced sausage over medium heat, about 5 minutes. Toss in the bell pepper, diced tomatoes, onion and garlic and continue cooking about 5 more minutes. Turn up heat a little if needed. Once the onions are translucent and the bell pepper is softened, you're ready to go.

To Serve:

  • On a plate, spread the rice layer out.
  • Top with the sausage and vegetables.
  • Sprinkle some shredded cheese and add sliced avocados, if desired.
