Ingredients

  • 1 cup Quinoa prepare according to pkg. directions
  • 2 Tablespoons unsalted butter
  • 2 cups Spinach torn
  • 1 Tablespoons Garlic Powder
  • ½ cup Yellow Sweet Pepper diced
  • ½ cup Red Sweet Pepper diced
  • 9.6 ounce Turkey Sausage Crumbles
  • 1 cup avocado cubed
  • ¼ cup green onions chopped
  • cilantro parsley or another herb if you'd like

Instructions

  • Prepare 1 cup of Quinoa according to pkg. directions.
  • Melt the butter over medium low heat, toss the torn spinach in and stir until wilted. Remove spinach from pan and set aside on a plate.
  • Add diced peppers and jimmy dean sausage to pan and heat for approximately 8 minutes or until heated through. Stir often.
  • Remove from heat and stir into cooked Quinoa. Stir in the chopped green onions and avocado. Top the bowl with roughly chopped cilantro, parsley or any other herb you'd like.
