Ingredients

  • 6 large Portabella Mushroom Caps
  • ¼ cups red bell pepper chopped
  • ¼ cups green bell pepper chopped
  • ¼ cups celery chopped
  • 10 ounces tuna in water drained
  • ½ cups cheese shredded
  • 4 Tablespoons mayonnaise
  • salt and pepper to taste

Instructions

  • Preheat oven to 400 degrees F.
  • In a large bowl, mix together the veggies, tuna and mayonnaise until blended. Add salt & pepper to taste.
  • Spoon the mixture into portabella mushroom caps.
  • Bake in 400 degree F oven for about 12 minutes.
  • Remove and sprinkle the tops of each with cheese.
  • Return to oven until cheese is melted, about 5 minutes.
  • Remove, allow to cool slightly and serve! Yum!
