This flavorful Sausage Lentil and Fennel Stew is hearty and perfect to warm you up. But it's also a fantastic summer soup too!

Ingredients

  • 16 oz chicken sausage or turkey Italian sausage, crumbled, browned and drained- you can
  • 2 cups chicken or turkey broth
  • 1 cups water
  • 1 cups dried lentils
  • 2 cloves garlic minced
  • 1 bulb fennel diced
  • 1 onion diced
  • 1 red bell pepper diced
  • salt and pepper to taste

Instructions

  • PLACE water, broth and veggies in a pot and bring to a boil, cooking for about 5-10 minutes
  • Add lentils, cover and cook for 25-30 minutes, until lentils are tender
  • Add sausage and heat through, about 10 minutes
  • Serve and garnish with chopped fennel tops (the feathery portion)
