Curry Egg Salad Sandwich

This delicious Curry Egg Salad Sandwich is super easy to make - add your favorite toppings and choose your favorite bread and it's the perfect lunch!

Ingredients

  • 12 hard boiled eggs peeled
  • 3 tablespoons green onions chopped
  • 1 stalk celery minced
  • 2 ½ teaspoons yellow curry powder
  • ½ teaspoons salt
  • ½ teaspoons pepper
  • 2-3 Tbsp mayonnaise

Additional for sandwich:

  • 1 lettuce leaf
  • 2 pieces Rye bread
  • 1 teaspoon paprika or some cayenne for spice

Instructions

To make the Egg Salad:

  • Add all ingredients to a food processor and blend well. If you don't have a food processor - use a fork and mash up the egg as much as you can (you want some pieces of egg).
  • Mix in all of the other ingredients.
  • Scoop out some egg salad and place it on the Rye bread.
  • Top with a lettuce leaf and any other condiments you'd like and the other piece of Rye bread.
