Cheesecake filled mini waffles with sliced banana, whipped cream, chocolate sauce and a cherry on top, these Banana Split Cheesecake Bites are such a fun dessert for any occasion. (We love them at a BBQ!)

4tablespoonsstrawberry cheesecake fillingmade from recipe below
1bananasliced
whipped cream
chocolate syrup
4maraschino cherries
For the Strawberry Cheesecake Filling:
1 ½cupschopped strawberries
½cupheavy whipping cream
1teaspoonspowdered sugar
8ouncescream cheesesoftened
½cuppowdered sugar
Instructions
For the Banana Split Cheesecake Bites:
Toast the waffles, according to package directions. Pull them apart or use a knife to slice them into 8 equal squares (4 squares per slice). For best results, allow to cool for at least 10-15 minutes.
Spread 1 tablespoon of strawberry cheesecake filling (recipe below) on 4 squares from one slice of toast.
Place a banana slice on top of the cheesecake filling. Top with the four other squares from the other slice. Place another banana slice on top.
Top each one with whipped cream, chocolate syrup and a cherry. Serve immediately.
For the Strawberry Cheesecake Filling:
In a blender, pulverize the strawberries and granulated sugar. Process until smooth. Pour the mixture through a fine mesh strainer, discarding any solids left behind. You should wind up with about a 1/2 cup of puree.
In a bowl, beat the heavy whipping cream until soft peaks form. Add in 1 teaspoon powdered sugar and beat until stiff peaks form. Set aside for a moment.
In another bowl, beat the cream cheese and 1/2 cup of powdered sugar 2-3 minutes. It should be light and smooth - next add the pureed strawberries and beat everything until mixed thoroughly. Fold in the whipped cream. Chill for at least 1 hour before using.
