Ingredients

  • 5 pounds potatoes
  • 1 pounds bacon cooked & crumbled
  • 1 large red pepper chopped
  • 2 stalks celery chopped
  • ½ cup onion finely chopped
  • 4 tablespoons minced garlic
  • 1 ½ teaspoon salt
  • 1 teaspoon pepper
  • 1 cup light mayonnaise
  • 1 ½ cups light sour cream

Instructions

  • Boil potatoes on stove about 20 minutes or until tender. Drain the water and allow to cool until you can handle them. Cut all the potatoes into 1 inch pieces.
  • In a large bowl, add the potatoes, bacon, red pepper, celery stalks and onion.
  • In another smaller bowl, mix together the mayo and the sour cream until blended. Add the salt, pepper and minced garlic.
  • Pour into the large bowl and toss the potatoes very gently until coated in the sour cream sauce.
  • Cover and chill for 2 hours.
  • Serve and enjoy!
