1 pounds frozen spinach thawed ¼ cup unsalted butter ½ cup onion chopped or minced 3 garlic cloves minced 1 teaspoon ground pepper ½ teaspoon nutmeg 1 teaspoons salt to taste ¼ cup all-purpose flour 3 ½ cups half and half 1 cup mozzarella cheese shredded 4 ounces cream cheese
Thaw spinach. Squeeze out as much water as possible. Set aside.
In a large skillet over medium-low heat, melt the butter with the minced onion and garlic. Cook for about 8-10 minutes or until onion is translucent.
Add in nutmeg, black pepper and salt.
Mix in flour and cook for 2-3 minutes, stirring often.
Add half and half and cook until mixture is boiling.
Add in shredded provolone and cream cheese and cook for 6-8 minutes, stirring very often; mixture will thicken.
Stir in the spinach and stir until combined. Cook 1-2 minutes.
Remove from stove and serve.
