Watermelon Mango Salad with Lime Coconut Cream

There is something so satisfying in helping others out. This week for the Secret Recipe Club – Group D reveal,  April needed an extra hand to make something from an orphaned blog and she asked if I would do it.

Usually I get it made super fast, but we were gone all morning and I didn’t get it until late afternoon and poor April is sick, and yeah…so I’m just getting to it now. I hate that this blog was abandoned for so long.

Shari from The Saucy Gourmet is the blog that I was asked to fill in on. I wish I had more time to create something from her. There were dozens of really tempting recipes.

Since I knew I didn’t have a lot of time I had to ignore some of her more time consuming dishes, no matter how much I wanted to make them.

I fell in love the moment I found her very simple Watermelon with Mango and Lime. It wasn’t so much that it was easy that was appealing, it was that I was looking for a side dish to serve with dinner tonight and I just so happen to already have sliced mango and some limes, I just needed a Watermelon.

Easy since the store is right next door.

I made it exactly how she did, the only change I made was to add a lime coconut “dressing” or cream to it. It was fabulous, easy and fresh. The perfect addition to dinner.

I topped each salad with a slice of sugared lime. They all enjoyed it very much!

Watermelon Mango Salad with Coconut Lime Cream Dressing

This could be served as a side dish, a dessert – whatever, the combination of Watermelon, Mango and Lime is the sweet taste of summer.

Ingredients
  

  • 4 pounds seedless watermelon cut into 1" cubes
  • 2 mangos peeled, pitted and cut in 1 inch chunks
  • 1 Tablespoons lime juice
  • 1 teaspoon lime zest
  • ½ teaspoon granulated sugar
  • 13 ounces canned coconut milk
  • 1 Tablespoons lime juice
  • 2 tablespoons powdered sugar

Instructions
 

  • Toss together the fruit, 1 tablespoon of lime juice, 1 teaspoon of finely grated lime zest and 1/2 teaspoon of sugar.
  • Chill covered for about 20 minutes. I stirred it up real good at the 10 minute point.
  • While it’s chilling, using a mixer blend together the coconut milk, 1 tablespoon of lime juice and the powdered sugar. Mix for 1-2 minutes or until thoroughly combined and mixed.
  • Dish the fruit out onto a plate to serve, and cover in the Coconut-Lime Cream Sauce.
