Who doesn’t love Quinoa recipes these days?
When I was asked to participate in the Jimmy Dean recipe challenge, I jumped on it and couldn’t wait to try to create a healthy recipe using the turkey sausage crumbles. I knew I wanted to use Quinoa, after writing my 200+ Quinoa Recipes You Can Make Tonight post. It’s such a healthy little grain and makes every meal… just better.
There’s nothing like a good breakfast bowl, but what about when you take it a step further and create one that is good enough and healthy enough for dinner? You create your new favorite meal, that’s what. This dinner bowl turned out so great and ALL my teenagers ate it, which makes it even better in my book. Even the picky eaters enjoyed the textures, colors and flavors all melded together. That’s saying a lot.
It all started with this bag of Jimmy Dean and a box of Quinoa. The rest of the additions don’t have an elaborate story, they literally happened to be what I had on hand. I tend to keep veggies on hand a lot, so I had all kinds of thing I needed to use up and this dinner bowl seemed like the likely candidate for some healthy veggies.
That’s what I wound up loving about this recipe, is that honestly, you could add almost any veggie you have on hand. I almost used this dinner bowl as a way to use up leftovers… some green onion, bell peppers, avocado… yes please. When the whole thing was done, and we were finished admiring how pretty it turned out, we took our first bite.
The flavors all fit so well together and were addicting. Two of my kids went back for seconds (this defeats the skinnier aspect of the recipe, but hey they are teenagers, they burn calories quickly), and were sad there were no leftovers for the next day’s lunch. One even mentioned how yummy all this would be stuffed in a wrap for lunch. She’s on the right track, so I know what we are whipping up another batch of very soon.
My favorite part of this recipe is that I was able to keep it below 350 calories for a 3/4 cup serving, making it healthy and perfect for a skinnier meal. Plus the heartiness filled us up and didn’t have us running back to the kitchen an hour later. The sausage crumbles added plenty of flavor so there was no need for extra seasoning which is perfect in my book.
Ready to make it?
The household name Jimmy Dean tends to spark thoughts of breakfast and they certainly make it easy with these new Sausage Crumbles that come in Original, Turkey and Hot & Spicy. But, I was determined to turn a breakfast bowl into a healthy dinner bowl. If you are so inclined, add some scrambled eggs and call it a breakfast bowl. Quinoa and Turkey Sausage Crumbles Dinner (not breakfast) Bowl
- 1 cup of dry Quinoa prepare according to pkg. directions
- 2 Tablespoons unsalted butter
- 2 cups Spinach torn
- 1 Tablespoon Garlic Powder
- 1 Yellow Sweet Pepper diced
- 1 Red Sweet Pepper diced
- 1 pkg. 9.6oz Jimmy Dean - Turkey Sausage Crumbles
- 1 cup avocado cubed
- 1/4 cup green onions chopped
- Top with cilantro parsley or another herb if you'd like
Prepare 1 cup of Quinoa according to pkg. directions.
Melt the butter over medium low heat, toss the torn spinach in and stir until wilted. Remove spinach from pan and set aside on a plate.
Add diced peppers and jimmy dean sausage to pan and heat for approximately 8 minutes or until heated through. Stir often.
Remove from heat and stir into cooked Quinoa. Stir in the chopped green onions and avocado. Top the bowl with roughly chopped cilantro, parsley or any other herb you'd like.
