I brought some awesome Patriotic Smoothie Popsicles.

It’s a scorcher out there. In fact, today, the day I chose to make these, it’s a whopping 101 degrees! The feels like is 107 degrees and trust me, it feels like it.

We love making smoothies on hot days. They are a great way to cool down.

But sometimes it’s fun to change up your smoothie a little. You know, make it a little more festive… or in this case, patriotic.

Especially if you wind up making too much and want something to do with the leftovers.

I chose this design because I had seen some on Pinterest awhile back and always told myself I’d do the flag design someday.

Unfortunately, it was SO hot that once I unmolded these Patriotic Smoothie Popsicles, they began running together rather quickly.

I don’t really care though, because they were absolutely amazing and the perfect thing to cool down on a hot day!

We made up another batch that is waiting for tomorrow. We will enjoy them while watching fireworks!

I love that they are made of leftover smoothie, so they aren’t loaded with sugar (unless you load your smoothies with sugar, which I don’t.) and are definiely a healthier option.

These Patriotic Smoothie Popsicles are truly simple, require only a handful of ingredients, and are so much fun.

My kids loved them including the teenagers, and they don’t think anything is all that special anymore.

I’m usally getting the eye roll when I make one of the littles something fun. But these were a hit, and I’m celebrating that!

It is not too late to make these babies for tomorrow. My blueberry layer seemed to have not been frozen well enough (I did 2 hours), but I recommend 3 in my directions below.

I actually like how the trails of color look, but my second batch of these looked much better.

So you do what you’re happy with. They taste amazing anyway!

Ingredients
  

Blueberry Portion:

  • 8 ounces blueberries frozen
  • 4 ounces vanilla yogurt
  • ½ cups milk
  • sweeten to taste if desired

Coconut Portion:

  • 1 cup coconut milk
  • sweeten to taste if desired

Strawberry Portion:

  • 8 ounces strawberries frozen
  • 4 ounces vanilla yogurt
  • ½ cups milk
  • sweeten to taste if desired

Instructions
 

Step 1:

  • Add the blueberries, yogurt, milk and sweetener (if desired) to a blender and puree until smooth. Pour about an inch of liquid into your popsicle mold. Allow to freeze at least 2-3 hours.

Step 2:

  • If using sweetener mix into the coconut milk and after 2-3 hours of blueberry layer freezing, gently funnel about a 1/2″ of the white layer. Allow to freeze about 2 hours.

Step 3:

  • Add the strawberries, yogurt, milk and sweetener (if desired) to a blender and puree until smooth. When previous coconut stripe is frozen, gently gunnel about a 1/2″ of the red layer.

Step 4:

  • Repeat stripes until popsicle mold is full, freezing at least 2 hours in between layers.

Step 5:

  • When ready to unmold, gently submerge popsicle mold into cold water up to the very top but be careful NOT to get the water on top or in the molds. After about 30 seconds to a minute, gently begin sliding the popsicles out of the mold. ENJOY!
