Easy French Onion Soup

There is nothing very hearty about French Onion Soup… that is until you add the Homemade Croutons full of flavor and texture and … mmm… goodness.

Soups are wonderful this time of year. I love a big bowl when it’s freezing outside, the heartier the better.

I have two out of five teenagers that will eat any type of French Onion Soup.

Three out of five teenagers that will eat french onion soup if it has croutons and cheese in it.

The other two are just picky and that’s just them.

One (the oldest girl) would live on pizza and Ramen if I let her, and the other one is the youngest and still developing a taste for lots of foods. I forgive her.

She’s getting better. She’ll try this each time I make it, and each time she eats a bit more of it than the last, so I have faith. The other three will devour it.

I got this recipe out of one of those cookbooks from the 70’s that was put together by a school or junior league or something.

The cookbook isn’t here anymore, but I still have the index card I wrote it all down on.

I don’t need that to make it because this recipe for French Onion Soup is just that easy. This is one of the best onion soup recipes I’ve ever had.

Old Fashioned French Onion Soup with Homemade Croutons

Ingredients
  

To Make the Croutons:

  • 4 cups thick bread we use both “Texas toast bread and French Baguette
  • 2 teaspoons garlic powder
  • ¼ teaspoons salt
  • 3 Tablespoons butter melted

To Make the Soup:

  • 4 onions sliced
  • tablespoons butter
  • 2 tablespoons flour
  • 8 cups beef broth
  • salt & pepper to taste
  • Homemade croutons recipe included
  • Mozarella or Gruyere Cheese as much as you want
  • Parmesan Cheese grated

Instructions
 

To Make the Croutons:

  • Preheat your oven to 325 degrees F. Cut your bread into 1? cubes.
  • In a bowl, toss the bread cubes with the melted butter until lightly coated all over.
  • Toss the garlic powder with the buttered bread cubes. Toss the salt with the bread cubes. Spread the seasonings out as much as possible to coat all over.
  • Spread the cubes out on a a baking sheet and put them in the oven for about 20-25 minutes.

To Make the Soup:

  • Melt the butter in a large saucepan over medium low heat. Sauté the sliced onions in the melted butter stirring about 10 minutes, until golden and soft.
  • Sprinkle the flour over the top of the onions and stir for about 2-3 minutes.
  • Pour in the beef broth slowly, breaking up any clumps from the flour.
  • Stir in the salt and pepper.
  • Cover and allow the soup to simmer for 15 minutes.
  • Pour the soup into serving bowls. Top each bowl of soup with homemade croutons and lots of cheese. Sprinkle with Parmesan for some added flavor.
