There is something strangely satisfying about big bowl of fresh Pico De Gallo and some tortilla chips. Even when noshing on those tortilla chips I feel like I am being healthy when eating it. It’s fresh Pico De Gallo. Tastes amazing.

It’s good for me, right? I mean add some veggies to something and it becomes healthy, that’s how it works? No? Okay let me live in my little foodie fantasy world, thank you. Here, have a tortilla chip.

Sorry about the picture. It’s missing the jalapeno because I asked my daughter of Brie’s Bites to take the pictures for me and she grabbed a “kid friendly” bowl instead of my main bowl. haha

That’s okay I still love them! Of course mine has to have that jalapeno. I have to have real Pico De Gallo.

She also forgot to arrange the tortilla chips around it. But that’s okay, I still think her’s looks really pretty and I think she did a nice job. Go Brielle! The truth is, the whole process is super easy and really doesn’t need to be complicated. Some like it one way, some like it another way.

The cool thing is, it can be whipped up in less than 5 minutes and you can serve it with so many dishes, like a 7 Layer Dip which is my favorite way to eat it.

But it’s also great for taco’s, fajita’s… pretty much any Mexican dish and even stirred into Mexican rice, adds a certain something to the whole thing.

Or heck, I’ve already mentioned it, but I’ll do it again – grab some tortilla chips and dig right in.

This is my recipe. It’s the way I make it for my family. I’ve been making it this way since I was a teenager.

Is it right? I have no clue, I don’t care.

Does it taste good? Of course it does.

It’s fabulous, which is why I make it. I love it, my family loves it and I think you will love it too.

If you don’t like Cilantro, leave it out. Choose another herb. All of a sudden I’m finding lots of people who don’t like Cilantro or think it tastes like soap. Okay. To me it does not. It’s my most favoritest herb in the world, but my daughter thinks it tastes like aluminum so different people taste it differently.

Just substitute something else – Basil, Parsley….

Ingredients
  

  • 1 large tomato diced and seeded
  • ½ medium onion diced
  • 1 jalapeno diced
  • 1 garlic clove minced
  • 1 small lime juiced
  • 2 tablespoons cilantro finely chopped
  • pinch salt and pepper

Instructions
 

  • Pretty simple. Mix the tomatoes, onions, jalapeno, minced garlic, and the lime juice.
  • Add the finely chopped cilantro and a pinch of salt and a pinch of pepper.
  • Stir gently and serve.
