This chicken is probably one of the best chicken recipes we make. The kids love it, the adults love it and it is requested often. We ate this last night and I am still craving more.
Crispy Lemon Fried Chicken
2-3 lbs of chicken (we use drumsticks and chicken breasts)
3 1/2 tsp. salt, divided
2-3 Tbs. of lemon juice
1 c. flour
1 tsp. paprika
1/4 tsp. pepper
Vegetable or Olive Oil (or whatever you want to fry them in)
2 Tbs. hot water
Place the chicken in a large bowl and add the 3 tsp. of salt, the lemon juice and enough water to cover the chicken. Cover and allow the chicken to ‘marinate’ overnight in the refrigerator. When you’re ready to prepare the chicken, drain the water and allow the chicken to dry. In a plastic bag or bowl, combine the flour, paprika, pepper and 1/2 tsp. salt. Add the chicken and toss to coat.
In a skillet, heat 1/2 inch of oil to about 375 degrees. Add the chicken carefully. Brown on all sides about 20 minutes. Use tongs to rotate the chicken often. Reduce the heat. Add the 2 Tbs. of water, cover and cook for 20 more minutes or until the juices run clear.
At that point, uncover the chicken and cook for 10 more minutes or until the chicken is at the desired crispness. Enjoy!
