When I was a kid, it was all about the Grilled Cheese.

It is still a go-to comfort food, but now it has a big twist.

A gourmet grilled cheese sandwich fit for a king.

I give you our favorite Avocado Bacon Gourmet Grilled Cheese Sandwich.

A truly gourmet take on a true classic.

What cheese goes best with Grilled Avocado and Bacon Sandwich?

  • Mozzarella
  • Mild or Sharp Cheddar
  • Brie
  • Swiss
  • Gruyere
  • Gouda
  • Provolone
  • Monterey jack

But you know, you can choose any of your favorite cheeses, or combine a few.

Almost any sandwich veggie is going to be amazing on this sandwich, but our absolute favorites are:

  • sliced red peppers
  • sliced tomatoes
  • spinach
  • arugula
  • avocado slices
  • and lots more!

What Ingredients do I need for this Grilled Avocado & Bacon Sandwich

  • avocados
  • bacon
  • cheese slices
  • red peppers, arugula, whatever veggies you’d like
  • bread
  • butter or mayonnaise

How To Make Avocado Bacon Gourmet Grilled Cheese Sandwich

In a skillet, cook up the bacon. If you don’t like lots of bacon, you might only want to use half a package. I’ll be honest, we LOVE bacon. Like a lot. So we put a lot on each sandwich. You do what works for you.

Once the bacon is cooked, drain and allow to cool slightly.

Spread butter on one side of each of the eight pieces of bread.

Using a clean skillet or a griddle, put one piece of bread butter or mayonnaise side down into the skillet or on the griddle over medium heat.

If you have never used mayonnaise on a grilled cheese sandwich, you are truly missing out. It is SO good!

But butter works just as well, so you use what you’re comfortable with.

Next put bacon on the bread, then top with a slice of cheese and then sliced avocado.

Remember to go crazy – put as much avocado, cheese and bacon as you can stand on there.

Add red peppers, arugula and any other veggies you’d like. Use a sauce if you’d like or a thin spread of mayo, or use nothing at all.

It’s good no matter what you use!

Top with a buttered slice of bread with the butter facing up.

Allow to cook on that side for about 3-5 minutes or until golden, and then flip it over.

Cook for an additional 2-4 minutes or until golden brown.

Now put it on a plate and slice in half and eat. You’re welcome.

And my kids love it too. I mean it’s gooey and melty like the grilled cheese they know and love, but it also has layer upon layer of added flavor.

Plus, I felt good because I was able to get some good veggies into them, but still make it taste good to them by adding something they all love.

Ingredients
  

  • 2 slices Italian Bread
  • 2 ounces provolone cheese
  • 2 ounces monterey Jack cheese
  • ¼ avocado sliced
  • ¼ cups baby arugula
  • 2 slices roasted red pepper
  • butter for grilling

We added:

  • 2 slices bacon per sandwich

Instructions
 

  • On medium, heat your skillet.
  • Butter one side of each piece of bread. Place it butter side down into the pan. Top with one cheese, then the roasted red peppers, then the avocado, then the bacon (if you are using), then the arugula and then the other cheese. Place the second piece of bread, butter side up on top.
  • Flip when bread is golden brown and then grill the other side until golden brown and cheese is melted.
  • Serve immediately.
  • This is absolutely a perfectly, hearty, delicious meal. Everyone loves a good grilled cheese!
