Has anyone looked at a calendar?

How is it already July?

I feel like the year just started yet I look at my calendar and I am sure that I just switched it to July.

At this point the year is more than halfway over and I cannot even wrap my head around how we got here. It just seems to keep flying by.

This month my life took on some major changes which I will be disclosing shortly.

Some good, some not so good, but all things I can handle because I believe I can. 🙂 Positive attitude. Always a positive attitude.

However, with the flipping of the calendar, comes my monthly Secret Recipe Club reveal, and this month I was assigned Chit Chat Chomp written by Leigh, a Melbourne based home cook, amateur photographer and a lover of all things French.

While she has so many recipes (especially the French ones but even beyond that!) I wanted to try, like Brioche with Chocolate Centers, Navarin d’agneau printanier, Quiche LorraineCroque madam and Croque monsieur (both of which I have made before, but would have loved to make her way), I didn’t have a lot of time to do much in the kitchen, and I needed something simple and comforting.

I have been on a comfort food kick and pancakes are one of my ultimate comfort foods.

I had just bought a big bag of apples from the Farmers Market and figured I would use them in some recipes, and this one called my name.

I did make two additions to her recipe, I replaced the caster sugar with brown sugar and added cinnamon to make it very fall like.

I know I’m nuts with the summer heat upon us, but it was a nice little break and they tasted amazing.

The recipe was very simple and I will definitely be using this again, Leigh, thank you!

Ingredients
  

  • 1 cup all purpose flour
  • 1 teaspoons baking powder
  • 2 tablespoons brown sugar
  • 2 teaspoons Cinnamon
  • 1 egg lightly beaten
  • 1 cup milk
  • 1 apple coarsely grated

Instructions
 

  • In a large mixing bowl, mix together flour, baking powder, brown sugar and cinnamon.
  • In another smaller bowl whisk together egg, milk and apple.
  • Pour apple mixture into flour mixture and mix all ingredients just until combined.
  • Scoop pancake batter onto a lightly greased pan over medium heat and cook for approximately 2 minutes each side. Or use a griddle over medium heat.
  • Serve with maple syrup.

  6. Nicole, Although it’s summer here in DC too, I can’t help but think about making these apple pancakes after looking at yours. On second thought, maybe I’ll hold out for fall and have something wonderful to look forward to on the first chilly weekend morning:)
