Shrimp Scampi Spring Rolls

Delicious, mouth watering shrimp scampi stuffed inside spring rolls and complemented with avocado and homemade sauces, are a perfect quick and easy weeknight dinner.

From butterfly shrimp to popcorn shrimp and even my favorite, shrimp scampi, there is something for every taste. Besides shrimp we also love spring rolls.

Shrimp Scampi Spring Rolls

This is because they can be filled with any range of ingredients and made differently each time. Even the same meal can be changed up by changing what the filling contains, which we did in this case.

We started by sauteing the SeaPak Shrimp Scampi as directed on the package. In less than 8 minutes, it was done. I’d call that the PERFECT amount of time for a weeknight meal.

While the shrimp was doing its thing, we also cooked up some rice. Once the shrimp and rice were done, we simple added the rice to the skillet and tossed it all around to mix it all together.

The last step is to choose what else you’d like to offer to go inside. Some of family loves herbs and spices, so opted for green onions and pepper and a shake or two of a seasoning.

The rest of the family opted for some avocado which lends itself perfectly to this delicious meal.

We simply rolled it all up into rice paper and we were ready to eat! Doesn’t get much easier than that, and SeaPak products make dinner come together in no time at all. I love that.

Ingredients
  

  • 12 ounces Shrimp Scampi
  • 1 ½ cups rice cooked
  • ½ cup avocado chopped
  • 6 Rice Paper Circles
  • 2 tablespoons green onions chopped

Instructions
 

  • Prepare Shrimp Scampi according to package directions.
  • Mix rice and shrimp scampi together.
  • Prepare rice paper circles according to package directions.
  • Cut up veggies.
  • Lay a rice paper wrapper down, scoop rice and shrimp into the center, add veggies and roll.
  • Mix up a dip, or serve with condiment of your choice and ENJOY!
