A long time ago I showed my kids how versatile oats are.

They are the kind of food that can be used to bulk up dishes, are hearty and warming in the colder months and can stretch a dinner or breakfast.

We started making oatmeal breakfast bowls several years ago because they were great for the kids before school. After awhile, if they felt like it, they’d make one up after school too for an afterschool snack.

This one is our favorite after-school snack, but makes a great breakfast bowl whenever you decide to eat it.

Bobs-Red-Mill-Oats

This Savory Oatmeal Breakfast Bowl is loaded down with Bob’s Red Mill Regular Oats but any of Bob’s Red Mill Oats will do, any variety.

Instead of water, we cook the regular oats with chicken broth to bring some savory flavor right from the start.

I usually also mix in some finely chopped herbs, basil in this case.

A dash of salt and pepper and then scoop the oatmeal into the bowls. Next, we top the oatmeal with some seasoned scrambled eggs, bacon (or sausage), sauteed diced garlic, onion and tomatoes and top it all off with some cheese and green onions.

The adults in the house, love to add sliced avocado and a scoop of salsa.

Sometimes even a scoop or two of black beans.

I usually put several bowls out of different ingredients and let everyone in the house simply top their oatmeal with whatever deliciousness is available. It’s a great way to use up last nights cooked veggies or meats too.

Bob’s Red Mill Oats are an incredibly versatile whole grain.

This allows for savory or sweet when preparing them, which is GREAT! Oats are so good for us, rich in dietary fiber and can help reduce cholesterol.

Ingredients
  

  • ½ cups Bobs Red Mill Regular Oats
  • 1 cups chicken broth
  • pinch salt & pepper

Instructions
 

  • Microwave the oats and the chicken broth, with a pinch of salt and pepper for 2 minutes. Remove and fluff with a fork.
  • Top with scrambled eggs, crumbled bacon, sauteed onions, garlic, bell peppers, diced tomato, avocado. shredded cheese, green onions or anything else you have on hand.
