In the spirit of my A to Z Blogging Challenge, here is a wonderful TWO ingredient recipe for Pineapple Ice. I definitely bombed the A to Z Challenge this month but I have all the recipes complete so over the next couple of weeks I will put up the remaining recipes. While I have tried to stick to two and three ingredients for the most part, the main theme of this challenge for me this month was easy and simple recipes that anyone can make. I’m sure there will be a few that have more than three, but no matter what, they will be very easy.
Picking Pineapple for the letter P was pretty easy. We love Pineapple around here, and thanks to my very awesome OXO Pineapple Corer tool, we now buy them all the time because they are less of a problem to cut up. And all this recipe requires is a cut up pineapple and some ice. I mean seriously can you get better than that?
We’ve had some pretty hot days a couple of times already, you can tell summer is literally just around the corner in St. Louis. Our typical weather means we see only a couple of weeks of Spring weather and then it’s just plain hot and humid and sticky. Already having a taste of that, this was a fun refreshing treat on a hot, humid 80 degree day. I’ll take 80 degrees for right now, because in no time flat we are going to be crawling up there into the 90’s and I’m going to be guzzling these daily.
Did I mention how easy these are?
Make Pineapple Ice! You’ll cool down fast!
- 1 pineapple, cored and cut up
- 2 cups of ice
- In a blender, add the pineapple and the ice. Pulse until the consistency you desire.
- That’s it, pour into glasses and enjoy!
- If needed you can add a little sugar or honey.
