Mini Chef had the desire to make everyone breakfast this morning since I wasn’t all too pleased that donuts were on the menu, being National Donut Day and all. I didn’t plan ahead, so we didn’t make them from scratch, so the hubby ran out and grabbed a couple dozen to feed the masses this morning. Mini Chef knows I hate it when they don’t have a better breakfast so she decided to have fun and make breakfast for everyone.
She made Green Eggs & Cinnamon Toast and then served it all up to everyone with a side glass of orange juice. I’m not sure what compelled her to make Green Eggs per say, but that was what she decided to make so the food coloring was used, which is not one of my favorite practices but hey, at least she didn’t get it everywhere.
Her green eggs were a huge hit with the rest of the family. Imagine! They all asked where the ham was though. haha… go figure.
The cinnamon toast is something I have been making since I was a kid. I got it out of a children’s cook book that is so very near and dear to my heart. It’s THE cookbook that taught me to actually love cooking!
Recipe for Ronnie Rooster Sugar Toast (otherwise known as… Cinnamon Toast)
Preheat oven to broil. Take a piece of bread and smear butter across the top of it.
Sprinkle brown sugar over the butter. I usually use a TBS or two. (I don’t measure anything LOL)
Sprinkle cinnamon over the brown sugar. Use as much or as little as you like.
Place the slice of bread on a pan. Repeat procedure until the pan is full of slices. Put the pan in the oven under the broiler for about 1-2 minutes. Check often, so as not to over burn. The sugar should be all the way melted on the bread but should not be too dark.
It’s delicious and I’ve been eating it since I was about 4. That’s a lot of years!
Here are the green eggs: (they don’t even look like eggs… haha)
