But these just seemed like a no brainer for a recent party we hosted.

Who doesn’t love a loaded potato, and why not make them mini size so they can be eaten easier?

These were such a huge hit, that they were ALL gone in just a few minutes and I made a LOT!

My teenagers devour everything but these were pretty popular amongst all our friends and family.

And they are REALLY simple.

A few steps, and then some time in the oven, another step and one more short melt in the oven and you’re good to go.

And you can fit a lot of mini’s on a pan.

Also, we have used several different types of potatoes for these and they work just fine and are delicious, but for the best results, those really small baking potatoes are perfect.

Simply slice your potatoes about halfway through, being careful not to cut all the way through.

Coat them in olive oil and sprinkle with salt. Pop in the oven at 450 for about 45 minutes.

Remove from oven and slice cheese into squares to fit in between the cuts.

You don’t have to put cheese in between each cut. But you can.

Pop them back into the oven for about 5-10 minutes or until the cheese is completely melted.

Remove from oven, top with sour cream, crumbled bacon and chopped green onions.

Topping Ideas for Loaded Hasselback Potatoes

cheese – change up the cheese and use any type or any combination of types for these potatoes

bacon – of course you add bacon to a loaded potato, but you could also add thinly sliced beef, mini cubed ham, shredded chicken, etc.

sour cream – but don’t just stop with sour cream (and yes you can substitute greek yogurt), but also consider tomato sauce, garlic butter sauce, alfredo sauce, cheese sauce, bbq sauce and more.

green onions – you can substitute fresh chopped onions, or chives for the green onions, depending on the level of onion flavor you want.

herbs – from rosemary to basil and everything in between. Add whatever herbs you like to get the flavor you love most.

BBQ – shredded chicken, shredded or sliced cheese, crispy fried onions and bbq sauce.

BLT – sliced cheese, shredded lettuce, diced tomatoes and chopped or sliced bacon.

Buffalo Chicken – sliced mozzarella or bleu cheese chunks, shredded chicken, buffalo sauce with a ranch drizzle.

sour cream and onion – melted butter, a dollop of sour cream and chopped green onions or chives.

Taco – crumbled beef cooked in taco seasoning, shredded cheese, diced tomatoes, shredded lettuce, taco sauce.

Ingredients
  

  • 2 pounds yukon gold potatoes usually about 10-12 mini potatoes
  • ½ tablespoon Olive oil
  • pinch sea salt
  • 8 slices mild cheddar cheese slices
  • 3 green onions chopped
  • 6 strips bacon cooked and chopped or crumbled
  • sour cream for topping

Instructions
