We really love caprese salad, and so it only seemed fitting to try to turn it into a fun, delicious, grilled sandwich. The basil pesto brings out incredible flavor, the crunch of the grilled toast and the melty cheese is what makes up the crux of this amazing recipe.

Ingredients
  

  • 2 slices bread
  • 1 tablespoons butter
  • 1 slice tomato
  • 2 slices Mozarella 1/4" thick
  • 1 tablespoons basil pesto prepared
  • salt and ground pepper to taste
  • ½ tablespoons olive oil
  • 2 basil leaves

Instructions
 

  • Take a small dish and pour some olive oil into it. Melt the butter and add it to the dish with olive oil and mix up. Brush on the outside of the slices of bread.
  • On the inside of one slice of bread, spread some basil pesto on them and set it carefully on a dish. Add a slice of tomato, a couple of leaves of basil and sprinkle it with some sea salt and pepper. Now put a piece of Mozzarella on top of that. Take the 2nd slice of bread and smear it with some pesto and put it pesto side down on top of the Mozzarella.
  • Now flip the sandwich over in the olive oil, so both sides are coated with butter/olive oil.
  • Now using a griddle or a pan on the stove, grill each side until golden brown and cheese appears melted. It took me about 2-3 minutes and then I flipped it for an additional 2-3 minutes. About 5-6 minutes total.

    1. I’m sorry, I don’t have the nutritional value on it. I just kinda put things together and see how they turn out, and I don’t pay as much attn to the calorie/nutrition value as I probably should.
