I could seriously eat Salmon everyday. I love it so much. Salmon and Tilapia are my two favorite kinds of fish and if I could live off them only, I would.

When we are looking for a quick meal, but want to make it a really healthy meal, this is one of my go-to recipes. It’s so easy that the kids can make it too with no help from me, which is always a plus.

Of course mini-chef is almost 14 so there’s not much left she can’t do. Plus, this recipe goes perfectly with more than just fish. Shrimp and chicken work well too!

Anyway, you should make this for dinner. Soon. Trust me.

Ingredients for Garlic and Rosemary Roasted Salmon

  • 2 pounds of Salmon fillets
  • garlic cloves, chopped and/or minced
  • chopped Rosemary Sprigs, to taste
  • pepper and sea salt
  • Extra Virgin Olive Oil

How do I make Garlic Rosemary Roasted Salmon?

Preheat your oven to 425°.

Peel and chop the garlic or you can simply use minced garlic which we do.

Next, chop the rosemary. I use dried chopped rosemary sometimes, and it works just as well.

Cover a baking sheet with foil and then spread a very thin layer of Extra Virgin Olive Oil on the foil. Place the salmon fillets on the foil.  Brush more olive oil evenly over the salmon.

Add the sea salt and the pepper, then the rosemary and then the garlic.

Place in oven. Roast for about 10 minutes or until the salmon is flaky.

We serve this with these roasted green beans, quinoa and a fresh salad for a healthy well rounded meal.

Yes, I’m sure you think it’s weird I have these pictures of salmon in my post, but my goodness, I just think Salmon is the prettiest thing before it’s cooked. Love the color. I’m envisioning this on Sushi right about now!

  1. Salmon is definitely my favorite fish, too. When we lived in the Seattle area, my sister in law would go down to the wharf and get them freshly caught right off the boats. Wow! What flavor! I really like the treatment you gave yours. Nice and simple, but definitely delicious.

    1. I cannot get enough of Salmon, Kristen. I actually love fish, but something about Salmon. I’ve only had truly fresh Salmon once, but it was amazing. The fresh fish I usually get is Bass. Which is funny because I never liked it until I ate it fresh. haha
