I have to be honest,  during the busy weeknights, I tend to shy away from pork.

And it’s not because I don’t love it. I do. So does my family. But I feel like it takes too much time to get it all ready. I like my pork marinated in wonderful bold flavors and I also love to grill pork over other method.

Still, there are times when I wish I could just make it and not feel so overwhelmed by it all.

Yes it was a busy weeknight, yes we had a lot to do, and the whole dinner was ready in about an hour and I didn’t have to babysit it. I just set it on indirect heat until it reached an internal temp of 150 degrees and served.

We made the potatoes on the grill too, so it meant even less work overall. They were able to cook together. It was the perfect meal and we now reach for Smithfield® Marinated Pork much more often and the flavors are to die for. So good!
