I haven’t talked a lot about my garden on this blog, and I’m not really sure why. I reference it occasionally in a post when I am cooking and using something fresh out of my garden, but even that seems few and far between. I decided to correct that today and share with you not only my garden but the delicious recipes I have created using fresh from the garden veggies.
I’ll start by sharing the garden pics and then below each section I’ll share the recipes. Let’s get started.
I love creating recipes from Cucumber, here are a few.
- Sweet Basil Cucumber Melon Smoothie
- Creamy Cucumber Salad (with 3 variations on eating/serving it)
- Gyro’s with Tzatziki Sauce (the cucumbers are in the sauce!)
I love jalapenos. We’ve already had one slight mishap this summer with the first jalapeno that grew. I was so excited. A single jalapeno grew on the stalk. One. We nurtured that little guy like it was our job. When it was finally ready, I harvested it along with a dozen tomatoes and my son carries our harvest inside side and rather than placing it on the counter, where normal individuals would place fresh vegetables, he put them on the kitchen table. A few seconds pass, my cat discovers this beautiful green thing that looks like a toy and bats it onto the floor. No problem, since I would have washed it anyway. BUT, I also have four dogs, of the Shih-tzu variety, and the youngest of the bunch decided it looked like fair game and ate it for lunch. Yes, she’s fine. She didn’t even get sick, thank God. But… we had no Jalapenos which was very sad making.
When this little guy popped up less than a week later, and then two more of his friends, I was ecstatic. My son learned a valuable lesson and will not be placing anymore garden vegetables on the table. The wrath of a mom who lost her single jalapeno might have been enough.
While we eat a ton of jalapeno anything, I don’t have a lot of recipes on the blog … yet.
- Spicy Jack Bacon Jalapeno Cheeseburgers
- Shrimp Tacos with Jalapeno Ranch Sauce
- Easy Jalapeno Poppers
We got this plant kinda late in the planting season, so I wasn’t real sure if it was going to do much. Our unseasonably HOT weather has apparently been exactly what the doctor ordered. I’m also hearing that anything in the pepper family will be spicier this year due to the heat – can’t wait until this one is ready. And no, I don’t actually have an chili pepper recipes… yet. He’s our first one.
I promise, as soon as I get this guy harvested, we’ll be playing with the chili pepper recipes.
Green Beans/Garden Beans
I am very new to growing garden beans, but… I am not new to fresh from the garden green beans. Recipe below the picture, with new fresh from the garden green bean recipes coming soon.
Only a single recipe on my blog using fresh from the garden green beans: (we’ll be fixing that with more recipes SOON!)
I had so many recipes using fresh tomatoes, I limited myself in what I shared. Recipes below.
- Zucchini Tomato Mozzarella Medley
- Ranch BLT aka. Ranch Salad Sandwich
- Creamy Bacon Avocado Pasta Salad (uses cherry tomatoes from the garden!)
- BLT Egg Bake (a great breakfast with a fresh tomato slice on top!)
Don’t laugh. Yes I have corn growing in my garden. Four stalks to be exact. I’m from St. Louis, or rather Missouri, and while we aren’t actually the Corn Capital of the world, we have a lot growing. So I thought, why not?
No corn recipes either, but that’s okay because I have one coming next week!
Yes, I realize watermelon is not a vegetable, but I am so excited about the 11 watermelon growing on my one plant, I just had to share. This is the first year I have really tried to grow actual fruit in the garden, and my watermelons are flourishing. This guy is about the size of a tennis ball right now.
And I do have watermelon recipes:
I also have brocoli and carrots growing, and here’s a recipe using them:
I also have Asparagus growing but I’ve harvested this seasons so no pictures, but here are a few recipes for using it:
- Rigatoni with Bacon & Asparagus
- Baked Asparagus Fries
- Ham and Asparagus Rolls Ups (great snack or appetizer)
- Xavier Steaks (Steak, Asparagus and Swiss)
- Asparagus Souffle (no laughing at my fallen souffle! – the recipe is AMAZING!)
