Lemon Thyme Pork Chops with Quinoa, Asparagus & Red Peppers

Our family has a few favorite recipes that we tend to turn to again and again. Who doesn’t love a classic pork chop, paired with some veggies, or a salad. With Spring having arrived here in St. Louis, my asparagus and herbs are already growing like crazy in my garden and I already see signs of baby peppers. I wanted to update our normal pork chop recipe with a fun twist for Spring. Enter in these delicious, Lemon Thyme Pork Chops with Quinoa, Asparagus & Red Peppers. It’s an entire meal in itself and is a quick and easy recipe to boot. Can’t beat that, since easy and quick are the name of the game in this house.

As usual, the real test is, can I get five hungry teenagers and a picky toddler to eat it? Success! They devoured them and several wanted more. The light lemon and thyme flavor was just what the pork chops needed. Serving them over a bed of quinoa tossed with fresh asparagus and red peppers was the perfect addition to fill everyone up.

When local author Eluka Moore contacted me and asked me if I would be interested in checking out End of the Rainbow Fruit Salad, I jumped at the chance.

My 5 teenagers are mini chef’s in the kitchen and can cook up dinner in no time. So why would  I want a book designed for a child? I’m a former preschool teacher and while I’m not living that life anymore, I have recently realized I am not done teaching a little person….

My 18 mos. old nephew spends a lot of time with me and I am already trying to get him interested in helping me in the kitchen. He is still under 2 but he is so used to coming to Aunt Nicole’s house at least once a week and getting fed awesome food, and he will often sit on the counter with me for an hour while I prepare something. He loves to help pour things, put pieces of food in a bowl, and watch the mixer do it’s work. It won’t be long until I’m giving him minor tasks in the kitchen and I truly cannot wait.

In the meantime, I look for every opportunity to include him in food preparations.

Enter, End of the Rainbow Fruit Salad. I was immediately drawn to the concept behind the Kitchen Club Kids series. It’s one big learning adventure, in the kitchen and out. With this book, toddlers and young children learn numbers as they prepare a very simple recipe that is healthy, nutritious and fun to make.

The ingredients are simple and could be changed out to be seasonal or native to your area. The language in the book is simple, rhyming and fun. The illustrations are large, bold, colorful and appealing (even to us big kids).  I can tell you all the wonderful things I loved about this book, but I’d rather tell you about the first time I introduced the book to Alex. Because really, that’s the best review there is.

Meet Alex. This little boy OWNS my heart. As a mama who’s youngest is 14, it’s nice to have a little guy around.

So we read the book together first once through. He really enjoyed it, and he is just learning to say words so I was happy to get him to repeat ‘banana’, (nana) ‘blueberry’ (boober) and ‘strawberry’ (which really doesn’t sound anything like the word, but his eyes light up and he squeals… I think Strawberries are his favorite!) I was also happy to introduce him to a few fruit words he hasn’t heard yet. He loved the pictures. One thing I loved about the book is that they have hidden a pickle on every single page. After about the second page, and my pointing and saying “There’s the pickle” at least 3 times per page, he finally caught on and looked for that pickle on every single page… he did attempt the word. Sounded a little like “peek”. It worked for me.

Ingredients

After we read the story, we headed to the kitchen to create our own fruit salad (without “peeks” just with fruit haha) Of course, I brought the book with us because I think its important that he sees, even as young as he is, that you follow a “recipe”. We looked at each page and added the appropriate ingredients while I read him that page. He was absolutely enthralled.

I honestly have to say that he loved the interactive part of making the fruit salad. He loved being able to put the fruit into the bowl (although I must confess, quite a bit of it made it into his mouth along the way, which I thought was super cute).

It’s an easy process. Mom cuts up the fruit ahead of time. This gives you time while you’re reading to focus on your child, and teach them things like counting, colors and words (Depending on age of course).

The rhyming nature of the story is wonderful and held my nephew’s attention. Alex loved putting things into the fruit salad.

It teaches and promotes healthy eating for young children, something that often can’t be established until later in life. Now we can start much earlier.

The fruit salad was of course delicious, and he loved eating the fruits. I enjoyed having him try new fruits he’d never had before. I’m actually really excited about the next two in the series, and will definitely be sharing those too.

It’s important to teach our children to make healthy choices when it comes to food, and for someone like me it’s important to teach my children to spend time in the kitchen, tasting, experimenting….

This book does all that and more.

This conference that we have put together is really the ultimate experience.

I’m a busy mom. Our weeknights are spent running to and from a variety of activities, events and lessons. I’m plain tired when it comes time to prepare dinner and sometimes we barely have time to fit it in.

So why shouldn’t I make quicker meals, which eventually translates to more time to do the things I love, like being with my family?

If mom is always in the kitchen cooking, how is she spending time with the family?

Answer: She’s not. Or at least she wasn’t until recently.

Lately, I have been back on a quest to come up with delicious meals that are easy, and come together quickly. This helps me out throughout the entire week, including weekends.

Land O Lakes® Sauté Express® Sauté Starter's make it easy to get a meal on the table in minutes. A delicious shrimp pilaf is enhanced with the delicious squares.
Author:
Ingredients
  • 1 pound of shrimp - peeled
  • 2 squares of Land O Lakes® Italian Herb Sauté Express® Sauté Starter
  • 1 medium onion
  • 1 garlic clove, cut in 2 halves
  • 1-2 cups cooked rice, hot
  • 1 square of Land O Lakes® Italian Herb Sauté Express® Sauté Starter
Instructions
  1. In a saucepan, melt 2 squares of Land O Lakes® Italian Herb Sauté Express® Sauté Starter.
  2. When you see it bubble and hear it sizzle, add the garlic and onion. Saute for 2 minutes.
  3. Add the shrimp and saute 5 minutes over medium heat.
  4. In another pot, prepare the rice, drain extra water.
  5. Melt another square of Land O Lakes® Italian Herb Sauté Express® Sauté Starter into the rice.
  6. Pour the rice into a serving bowl. Pour the contents of the shrimp pan over the rice.

Emeril’s Potluck: Champagne Punch Recipe #SundaySupper

Emeril Lagasse doesn’t need an introduction. He’s an amazing man, with quite a resume under his belt.  Emeril is a TV chef and an author of 15+ cookbooks, and one of those cookbooks is Emeril’s Potluck, which I am now the proud owner of.

I love this cookbook and it’s huge offering of crowd-pleasing meals, appetizers, side dishes, drinks and desserts. All are perfect for any gathering involving food. And seriously, what’s a gathering without food?

When I first opened the cookbook, I was pleasantly surprised at the sheer number of recipes he has included, at least 150, though I’m sure more. And there is something for everyone which is always good.

I couldn’t decide what to make first, but Cowboy Chicken Casserole, Retro Ambrosia and Honey Spice Cake are at the top of my list of to-try soon. For now I made Emeril’s Champagne punch, which is absolutely perfect for New Year’s and is on our menu to share that night again. This cookbook is actually perfect for New Years with all of it’s great dishes perfect for family and friend time.

A wonderful, full flavor champagne punch by Emeril Lagasse from his cookbook Emeril's Potluck. Perfect for holiday's or brunches or to celebrate just because. Recipe courtesy Emeril Lagasse, Emeril’s Potluck, William Morrow Publishers, New York, 2004

Ingredients
  • 1⅓ cups fresh lemon juice
  • 1 cup superfine sugar
  • ½ cup orange liqueur (recommended: Grand Marnier)
  • ½ cup Triple Sec
  • ½ cup cognac
  • ½ cup fresh orange juice
  • 2 bottles chilled dry Champagne or sparkling wine
  • Orange or lemon slices
  • Fresh strawberries, optional
Instructions
  1. Combine the lemon juice, sugar, orange liqueur, Triple Sec, cognac, and orange juice in a non-reactive bowl and stir until the sugar is completely dissolved. Add the Champagne and stir to combine. Cover and refrigerate until chilled, about 1 hour.
  2. Pour into a decorative bowl or pitcher. Garnish with orange or lemon slices and fresh strawberries, if desired. Serve in Champagne flutes, wine glasses, or punch cups.

When I received Shaina Olmanson’s debut cookbook,  Desserts In Jars: 50 Sweet Treats That Shine (The Harvard Common Press – June 2012), I was ecstatic. I just knew this cookbook was designed for me and my family.

My kids know, I love to prepare simple desserts that look fancy and I’ve got a little love affair with jars going. I’m always looking for new things to make and fun ways to serve them to my friends and family.

Olmanson has created wonderful recipes with cute and inventive ways to serve them. They are the perfect dessert portion and just beautifully presented. As soon as I got my book I wanted to try them all.  Who wouldn’t want to, with delicious  recipes such as: Orange-White Chocolate Cheesecakes with Cranberry Sauce, Lemon-Blueberry Bread Pudding, Peach Granita Bellinis and Spiced Hot Chocolate Mix with Cinnamon Marshmallows?

Banana Buttermilk Trifles – Desserts in Jars #DessertsInJars
 
Rich, Creamy and Delicious Banana floating on soft, moist cake & topped with a creamy decadent cream pudding sauce. Heaven in a little glass jar.

For the cake
  • 1 cup granulated sugar
  • 8 tablespoons (1 stick) unsalted butter, softened
  • ¼ cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 3 overripe bananas
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
For the pudding
  • 1⁄3 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1⁄8 teaspoon salt
  • Vanilla bean seeds scraped from 1 vanilla bean pod
  • 3 large egg yolks
  • 2 cups whole milk
  • 2 tablespoons unsalted butter, at room temperature, cut into pieces
  • 6 ripe bananas
  • 1 cup heavy cream
  • 2 tablespoons confectioners’ sugar
Instructions
  1. Make the cake: Preheat the oven to 350°F. Line a 9 × 13-inch baking pan with parchment paper. Cream together the sugar and butter for 2 minutes. Add the buttermilk, vanilla, and egg and mix on low speed until blended. Mash the bananas slightly, add them to the bowl, and mix well on low speed.
  2. In a separate bowl, whisk together the flour, baking powder, and salt. Mix the dry ingredients into the wet ones just until incorporated. Spread the cake batter onto the baking pan in an even layer.
  3. Bake the cake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool completely.
  4. Make the pudding: Whisk together the granulated sugar, cornstarch, salt, and vanilla bean seeds in a medium saucepan. Whisk in the egg yolks until well combined. Slowly pour in the milk, whisking to incorporate it. Cook the mixture over medium-low heat until it thickens, about 10 to 15 minutes. Remove from the heat and whisk in the butter one piece at a time, making sure each piece is incorporated before adding the next. Cover the top of the pudding with plastic wrap and refrigerate until cool, 1½ to 2 hours.
  5. Using the top of an 8-ounce jar as a guide, cut 10 circles from the cake. Fit the circles into the bottoms of ten 8-ounce jars. Slice the ripe bananas ¼ inch thick and line the sides of the jars with the banana slices pressed up against the glass, two slices deep. Pour the pudding into the jars to cover the bananas.
  6. In a medium bowl, beat together the heavy cream and the confectioners’ sugar until stiff peaks form. Spoon the whipped cream over the pudding. Refrigerate until ready to serve.
