Ingredients
  

For Coffee Cake:

  • 2 cups all purpose flour
  • 1 cup granulated sugar
  • 3 teaspoons baking powder
  • 1 teaspoons salt
  • ¾ cups unsalted butter softened (omit salt if you use salted butter)
  • 2 eggs
  • ½ teaspoon vanilla extract
  • ¾ cups milk
  • 2 cups blueberries

For the Topping:

  • ¼ cup brown sugar
  • ¼ cups all purpose flour
  • 1 teaspoons ground cinnamon
  • ¼ cups butter
  • blueberries if desired

Instructions
 

  • Preheat oven to 350 degrees.
  • Grease a 9″x9″ square pan.
  • In a large mixing bowl, sift together the flour, sugar, baking powder and salt. On low speed, add in the butter, egg, vanilla extract and milk and mix beat together for 2 minutes.
  • Gently fold in the blueberries; spread in pan.

For the Topping:

  • In a separate bowl, using a pastry cutter or your fingers, combine flour, brown sugar, and cinnamon until crumbly. Cut in the cold butter with your fingertips or a pastry cutter until pea-sized crumbs form.
  • Sprinkle the crumble topping evenly over the cake batter. Add a few blueberries on top, if desired.
  • Bake at 350 degrees until toothpick inserted in the center comes out clean, approx 35-45 minutes.

  1. Well I love to cook for my kids. I used to own coffee bars and baked a lot of muffins in the shop.But the problem was the amount of time it took to do them. So what I look for now is smaller cooking times as they take up the oven for ages.Then the kids just get moody so I can’t win Ha
